Clementine Chocolate Mousse Topped With Candied Clementine Slices

Ingredients
  

Clementine Chocolate Mousse

  • 2 Cups Heavy Whipping Cream
  • 2 Cups Semisweet Chocolate Chips or 1/4 Cup of Cocoa Powder
  • 2 Tsp Vanilla Extract
  • 1/4 Cup Icing Sugar
  • 4 Clementine's Juiced + Zest

Candied Clementine Slices

  • 1 1/2 Cups Water
  • 3/4 Cup Sugar
  • 2 Clementine's Sliced

Instructions
 

Clementine Chocolate Mousse

  • Melt chocolate chips in the microwave for about 2 minutes, stirring every 30 seconds. Then let chocolate cool for 5-7 minutes.
  • Grab a large metal bowl and add in your heavy whipping cream. Beat the whipping cream until hard peaks form. Save bit of the plain whipped cream for garnish.
  • Add in the vanilla, icing sugar, clementine juice and melted chocolate and quickly beat until everything is well combine. Don't forget to scrap the sides!
  • Pipe the mousse into containers of choice. I used Ramekins for mine, cover and immediately put in the fridge to set.

Candied Clementine Slices

  • In a non-stick pan, on medium-high heat, add in your water and sugar and let it come to a boil.
  • Add in your clementine slices and cook until the fruit is translucent.
  • Turn the heat down to medium-low heat and let the orange's sit in the syrup.
  • Lay a parchment paper on the counter and carefully take out each clementine slice to dry. Make sure that each slice is separated!
  • Right before serving, grab a bowl of sugar and coat each clementine slice and garnish it on the mousse with the plain whipped cream and orange zest!
