Ube Crinkle Cookies

This Cake Box Mix Ube Cookies are delicious, easy to make and full of ube flavour! This recipe is perfect for anyone even kids to try at home!

Ingredients
  

  • 1 White Cake Box Mix
  • 2 Eggs
  • 1/3 Cup Olive Oil or oil of choice
  • 2 Tsp Ube Extract
  • 2 Tbsp Ube Jam
  • 1 1/2 Cup Icing Sugar

Instructions
 

  • In a large bowl, mix together your cake mix, oil, eggs, ube jam, and ube extract until well combined.
  • Once well combined, cover bowl with plastic wrap and leave the dough in the fridge to chill for 20-30 minutes.
  • After 20-30 minutes, preheat your oven to 350F.
  • Scoop out each cookie dough ball into the same sizes and generously roll in icing sugar. Ensure that each ball is covered.
  • Place each ball onto your parchment lined baking sheet about 1-2 inches a part and bake for 10 minutes.
  • Cool, serve and enjoy!
