Quick Shrimp Ceviche
This shrimp ceviche is a super fresh and crunchy seafood appetizer. Shrimp ceviche is best served with crunchy corn or tortilla chips!

- 1 300g Raw Shrimp peeled and cleaned, cubed
- 3 Lime juiced
- 1 Lemon juiced
- 1 Orange juiced
- 1/2 Red Onion diced
- 1/2 Cucumber diced
- 1 Tomato diced
- 1 Avocado diced
- 1-3 Jalepenos diced
- Cilantro/Parsley/Green Onions diced
- Salt
- Pepper
- Hot Sauce
In a medium bowl, juice 2 limes (save 1 for later), lemon, and orange. Mix in salt and pepper to your liking.
In a large bowl, add in your cubed raw shrimp. Pour the citrus mixture from step 1 and ensure that all the shrimp pieces are covered in juice. Leave in the fridge to "cook" for 30 minutes-1 hour.
Once the citrus juice has cooked the shrimp, add in your diced red onions, cucumbers, tomatoes, jalapenos, avocado and herbs of choice.
Squeeze the last lime and add hot sauce and give one more mix.
Serve and enjoy with chips!
