Preheat your oven to 350F and line a baking sheet with parchment paper.
In a large mixing bowl, add in your melted butter, brown and white sugar, ube & coconut extract and eggs. Whisk together until well combined.
In a separate bowl, combine your baking soda, salt and, flour then pour in your wet ingredients bowl in and mix all together.
Scoop out cookie dough into even 2 inch balls and roll into the shredded coconut. Place on baking tray, spaced 2 inches apart.
Bake for 12-15 minutes or until golden brown on the bottom.
Transfer to a cooling tray, cool, serve and enjoy!
