This Fall Harvest Salad with Maple Dressing is super robust in flavours but has everything in every bite. You've got sweet from the apples, pears, dried cranberries and roasted sweet potatoes. You've got salty from the feta. You've got crunchy from the walnuts. And finally, you've got soft from the kale, field greens and spinach doused with maple dressing.

Ingredients

Fall Harvest Salad

  • 1 Cup Kale
  • 1 Cup Spinach
  • 1 Cup Field Greens
  • 1/2 Cup Roasted Sweet Potatoes
  • 1/2 Cup Cranberries
  • 1/2 Cup Walnuts
  • 1 Apple thinly sliced
  • 1 Pear thinly sliced
  • 1/2 Cup Feta crumbled or shredded

Maple Dressing

  • 1/4 Cup Maple Syrup
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Yellow Mustard
  • 1 Tbsp Olive Oil
  • 1/4 Tsp Salt
  • 1/4 Tsp Pepper
  • 1/4 Tsp Cinnamon
  • 1/4 Tsp Nutmeg

Instructions

Fall Harvest Salad

  • In a large bowl, add in your kale, spinach and field greens.
  • Next, add in your sweet potatoes, apple & pear slices, walnuts, cranberries, and feta and set aside.
  • Make the dressing to complete below.

Maple Dressing

  • In a small bowl, add in your maple syrup, balsamic vinegar, yellow mustard, olive oil, salt, pepper, cinnamon and nutmeg
  • Whisk together until fully combined and pour into salad and toss.
  • Serve and enjoy!
