Gingerbread Chocolate Chip Cookies

These Gingerbread Chocolate Chip Cookies are soft, chewy, and full of warm holiday spice with melty pockets of chocolate in every bite. They’re the perfect blend of cozy gingerbread flavour and classic chocolate chip goodness! They are impossible to resist!

Ingredients
  

  • 2 Cups All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1 Cup Brown Sugar
  • 2 tsp Vanilla Extract or vanilla bean paste!
  • 1/4 Cup White Sugar
  • 1/2 Cup Melted Unsalted Butter
  • 2 Eggs
  • 1/2 tsp Salt
  • 1 Cup Chocolate Chips
  • 1/2 Tbsp Gingerbread Spice Mix
  • 16-20 Mini Gingerbread Men 1 per cookie but the amount may vary depending on how big you roll your cookies!

Instructions
 

  • Preheat your oven to 350F and line a baking sheet with parchment paper.
  • In a large mixing bowl, add in your melted butter, brown and white sugar, salt, gingerbread spice mix, vanilla extract and eggs. Whisk together until well combined.
  • Next, slowly add in your all purpose flour and baking soda and mix all together until it forms a soft cookie dough.
  • Lastly, fold in your chocolate chips just so they are evenly distributed and be careful not to overmix!
  • Scoop out cookie dough into even 2 inch balls or size of your choice, spaced 2 inches apart and place on the cookie tray. The cookie dough balls do not need to be perfect then press a mini gingerbread man on top!
  • Bake for 10-17 minutes or until golden brown. The baking times depend on your cookie sizes. The cookies in these blog photos I baked for 15 minutes until the edges were brown, but they were large cookies! You can set a timer for 12 minutes then just check on them and see if they need more time :)
  • Once baked to your liking, cool, serve and enjoy!
