Maple Bacon Muffins

- 2 Cups All Purpose Flour
- 1/4 Cup White Sugar
- 1 Tbsp Baking Powder
- 1/2 tsp Salt
- 1 Cup 2% Milk
- 1/3 Cup Unsalted Butter melted
- 1 Egg
- 1 tsp Vanilla Extract
- 1 Cup Crispy Bacon Bits optional, save a little bit to sprinkle on top
- 1/2 Cup Brown Sugar
- 1/4 Cup Maple Syrup
Preheat oven to 375F and line a muffin tin with paper liners or grease well.
In a large bowl, whisk together flour, white sugar, baking powder and salt.
In another bowl, mix in your milk, melted butter, egg, maple syrup and vanilla extract until well combined.
Pour wet ingredients into the dry ingredients and stir until well combined.
Fold in the brown sugar and bacon bits. Do not overmix! You want ribbons of brown sugar and bacon throughout the muffin.
Scoop batter evenly into the muffin cups about 3/4 full as they rise a little bit.
Bake for 18-20 minutes or until a toothpick comes out clean.
Let cool for 5-10 minutes, serve and enjoy!
