- 8 Eggs
- 1 Cup Kale either frozen or fresh, shredded
- 8 White Mushrooms diced
- 1/2 Cup Shredded Cheese or as much as your heart desires
- 1/3 Cup Milk 2% dairy, or any unsweetened dairy substitute
- Salt to taste
- Pepper to taste
Preheat your oven to 375F and either grease a muffin tin or use silicone muffin liners.
In a large bowl, crack in 8 eggs then whisk together.
Once eggs are fully whisked, add in your milk, kale, mushrooms, cheese, salt and pepper. Give it one more whisk until everything is fully mixed up.
Get your muffin tin and use a ladle to pour the mixture evenly throughout.
Bake in the oven for 25-35 minutes or until the tops of the egg bites are golden brown.
