Coffee Crunch Cookies
These Coffee Crunch Cookies are the best cookies to have with your tea of coffee! They are a thick, crumbly and delicious infused coffee dessert.

- 1 Cup Packed Brown Sugar
- 1/2 Cup White Sugar
- 1/2 Cup Melted Butter
- 2 Eggs
- 1 Tsp Vanilla Extract
- 1 Tsp Baking Soda
- 2 Cups Flour
- 1 Cup Almonds, Pecans & Walnuts or your choice of nuts
- 1 1/2 Shots Espresso or 2 shots strong brewed coffee
Espresso Chocolate Drizzle (Optional)
- 1 Shot Espresso
- 2 Tbsp Melted Chocolate
Grab a bowl and add brown sugar, white sugar and melted butter
Crack 2 eggs
Add vanilla extract and baking soda
Gradually fold in the flour
Add in the 2 shots espresso or brewed coffee and nuts
Fold until everything is fully incorporated
Stick cookie dough in fridge for 15-20 mins and Preheat oven to 350 F
Prepare a baking sheet and line with parchment paper
Scoop out even sized cookie dough balls onto sheet
Bake for 12-14 minutes and remove from oven.
