Easy Coffee Crunch Cookies

Coffee is a flavour that I can’t live without. I’m been cutting down a little because the addiction was way too strong but I have to admit, I love coffee as a flavour.

Coffee ice cream, cakes, biscuits, buns, cookies, etc.! Lots of people have coffee for the caffeine aspect but for me, it’s purely the flavour. I have been drinking decaf coffee too and I’ve been loving it.

I did some recipe experimenting with these Coffee Crunch Cookies did not disappoint. It is definitely a heavier cookie than usual but it’s perfect to have for tea time. The flavour of coffee in this one is quite mild too so it’s nice even for people who don’t love coffee!

I love adding nuts to a lot of my food because I am a big texture person! I can’t do something that’s too soft or mushy. I would’ve done just walnuts to this one but I had extra pecans and almonds so I did a mixture of all 3 kinds.

This recipe is actually inspired by my Chocolate Chip Cookie recipe because I was eating these the other day and thought wow it would be so great to have a hint of coffee in these!

A little recipe testing and the Coffee Crunch Cookies were created. I was a little afraid that they weren’t going to turn out that great but was pleased with the results! I shared these with some friends and family who lived in the area and they enjoyed it too.

My dad loves coffee and would sometimes just eat chocolate-covered coffee beans as a treat! I would sneak some too so I guess this coffee addiction came from my Dad! I’m not complaining because it has been so nice to enjoy cups of coffee together!

HERE IS HOW TO MAKE Coffee Crunch Cookies:

WHERE CAN I FIND THESE INGREDIENTS?

Most ingredients you can find already in your home! Especially if you’re big into baking. Other than that, you can definitely just pick them up at any local grocery store. The best part of Coffee Crunch Cookies is that you could make your espresso just the way you like it!

WHAT ARE THE INGREDIENTS?

The base of this cookie is pretty much a standard cookie base of flour, sugar, and butter but these are the ingredients:

  • Brown Sugar
  • White Sugar
  • Melted Butter
  • Eggs
  • Vanilla Extract
  • Flour
  • Espresso
  • Nuts
  • Chocolate

CAN I SUB ANYTHING OUT?

I’d keep it as is but you’re welcome to change the nuts that you put in! I just did a mix of almonds, pecans and walnuts but peanuts, macadamia or pistachios would be delicious too! The espresso chocolate is just drizzled on top so you can omit that or use any chocolate of your choice. Dark or white chocolate would do this justice too! You can also just add the chocolate chips in the Coffee Crunch Cookies dough if you’d like!

WHAT DOES IT TASTE LIKE?

This cookie is quite heavy so when you pick one up, you can feel it. This recipe almost gives it a crumbly, cakey vibe. I really enjoyed this cookie as the coffee taste wasn’t too overpowering and I would definitely serve this to people who don’t like coffee. When you first take a bite, you kind of inhale the coffee taste but as you continue to chew, it is not prominent. I really love the espresso chocolate drizzle on top and I think it sets the whole cookie together as this cookie isn’t too sweet.

HOW LONG DOES IT KEEP FOR?

I would say that keep very well! I baked them and gave some away then I stored it in an airtight container for about a week and a half and they were still in very good condition! I’d say for the best taste and texture, store them up to a week in a cool, dry place and up to 2 weeks in the fridge. You can also roll them out and store them in the freezer and just bake them when you feel like having a hot and fresh one!

Make sure they don’t sit out too long as you want to keep the Coffee Crunch Cookies moist and not dry.

ANY OTHER NOTES?

  • Top it with whatever you’d like! I chose this espresso/chocolate drizzle as I didn’t want the chocolate chips inside
  • You can also top it off with some flaky salt if you like salt on your cookies! I like doing this when they are hot out of the oven. Broma Bakery does this in their Espresso Chocolate Chip Cookies! Look amazing.
  • These really aren’t that sweet so it’s perfect on the side of a coffee or tea
  • The crunch is a surprise but it’s a nice one! I love different textures in my food so I really enjoyed this one
  • I rolled them super huge so you’ll probably be able to make a lot more than 12

Coffee Crunch Cookies

These Coffee Crunch Cookies are the best cookies to have with your tea of coffee! They are a thick, crumbly and delicious infused coffee dessert.

Equipment

  • Oven

Ingredients
  

  • 1 Cup Packed Brown Sugar
  • 1/2 Cup White Sugar
  • 1/2 Cup Melted Butter
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1 Tsp Baking Soda
  • 2 Cups Flour
  • 1 Cup Almonds, Pecans & Walnuts or your choice of nuts
  • 1 1/2 Shots Espresso or 2 shots strong brewed coffee

Espresso Chocolate Drizzle (Optional)

  • 1 Shot Espresso
  • 2 Tbsp Melted Chocolate

Instructions
 

  • Grab a bowl and add brown sugar, white sugar and melted butter
  • Crack 2 eggs
  • Add vanilla extract and baking soda
  • Gradually fold in the flour
  • Add in the 2 shots espresso or brewed coffee and nuts
  • Fold until everything is fully incorporated
  • Stick cookie dough in fridge for 15-20 mins and Preheat oven to 350 F
  • Prepare a baking sheet and line with parchment paper
  • Scoop out even sized cookie dough balls onto sheet
  • Bake for 12-14 minutes and remove from oven.

Espresso Chocolate Drizzle

  • Whisk together the espresso and melted chocolate until both ingredients are fully combined.
  • Drizzle the Espresso/Chocolate mixture on top of the cool cookies. Serve and enjoy!

I have been testing out baking recipes A LOT because one of my goals this year is to be a better baker. I struggle with baking a lot so I am determined to get better! This Coffee Bean Cookies recipe from The Grumpy Olive is next on my list of cookies to make!

Stay tuned for more baked goods! I’m hunting down lots of inspiration on Pinterest. Cookies are something I’m a little more comfortable with. Cakes and muffins are definitely something I want to work on because the ones I make right now are a little questionable I have to admit.

My favourite cookie so far is a pistachio cookie. I LOVE pistachio so much! I’ll have to share a recipe for it in the future too.

    I’m not and never will be a coffee person. Cannot do anything to do with the word at all. That being said your post requires full justice! I’ll recommend this to my coffee lover sis.
    You spoke my heart there Lynn! 5 mins prep time? I’m the Express way person only and only. Two more… I love texture, nothing soft and squishy. Nut mix would definitely taste better than one I can say because I enjoy it this way too. And I like heavy cookies more than others. So what u can do is I can try the same minus one ingredient.     Made these and they were absolutely scrumptious! Very soft and cakey, and the nuts were great. I had to substitute espresso with just instant coffee, but next time I won’t so I have a stronger coffee flavor. Would definitely recommend! ?

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.
* In a small bowl, whisk together garlic, sesame oil, sesame seeds, soy sauce, brown sugar, and rice vinegar until well combined.
* Pour the sauce over the salad and toss until evenly coated.
* Chill in the fridge before serving for extra flavor for minimally 12 hours! Enjoy!

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar
* 2 Eggs
* 1 tsp Vanilla Extract
* 1 Tbsp Almond Extract 
* 3/4 Cup Sour Cream
* 1/4 Cup Milk
* 2 Tbsp Poppy Seeds
* 1/4 Cup Slivered Almonds sprinkle on top

INSTRUCTIONS
* Preheat oven to 350°F and line a 12-cup muffin tin with liners or lightly grease it.
* In a large bowl, whisk together oil, sugar, eggs, vanilla extract, almond extract, sour cream, and milk until smooth.
* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.
* Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
* Let cool slightly before serving.

This Spicy Canned Tuna Sushi Bake is creamy, savory, and packed with bold flavor! Made with simple pantry ingredients, it’s an easy, budget-friendly twist on sushi! It is perfect for sharing, scooping with seaweed, and satisfying all your sushi cravings at home.

INGREDIENTS
* 1 Can Tuna drained
* 2 Tbsp Sriracha
* 1/4 Cup Mayo
* 1 Tbsp Sesame Oil
* 2 Tbsp Furikake
* 1 Cup White Rice cooked
* 1 tsp Sugar
* 1/2 Tbsp Rice Vinegar
* 1 Packet Seasoned Seaweed

INSTRUCTIONS
* Preheat your oven to 400F and prepare a 6-inch baking pan.
* In a bowl, add in your rice and heat it in the microwave for 1 minute. This is so it’s easier for the sugar and rice vinegar to soak in. Add in your rice vinegar and sugar and mix well.
* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
