Mulan's Breakfast Rice Porridge

Mulan's Breakfast Rice Porridge is the perfect filling and savoury breakfast! Eggs, bacon and rice?! What an excellent combo to have for any meal!

Ingredients
  

  • 2 Eggs
  • 2-4 Bacon Slices
  • 1 1/2 Cups Cooked Rice
  • 3 Cups Water
  • 1 Tbsp Chicken Bouillon
  • 2 Garlic Cloves minced
  • 1 Tsp Olive Oil
  • Salt to taste

Instructions
 

Cooking the Rice Porridge

  • Turn your stove on medium-high and in a small saucepot, add in your cooked rice, chicken bouillon, minced garlic cloves and half of your water.
  • Let the rice breakdown in the water and once the water starts absorbing, add in water little at a time.
  • Once your rice porridge has reached its mushy consistency, you can add in salt to your liking and leave to cool.

Baking the Bacon

  • Preheat your oven to 400F.
  • Line a baking sheet with aluminum foil and place your bacon strips in a curl shape like a smile.
  • Bake the bacon for about 20-30 minutes or until golden brown and crispy and set aside to cool.

Frying up the Eggs

  • Turn your stove on medium-high and in a small frying pan, add in your olive oil and heat it up.
  • Crack your eggs and fry them up the way you like them.

Assembling the bowl

  • Grab a large bowl and add in an even amount of rice porridge.
  • Add in two eggs as eyes and a bacon smile.
  • Enjoy and serve!
