In a medium pot, set the burner to medium heat and add in oil.
Saute the onion and garlic until fragrant then add the chicken. Let the chicken cook until nice and browned.
Next, add in your basil, salt, pepper and chicken bouillon.
Once everything is well combined, add in your coconut milk and let simmer.
Lastly, add in your pineapple, bell peppers, and spinach and cover for another 10-15 minutes.
Serve and enjoy on top of rice!
