Pineapple Coconut Chicken
This delicious pineapple coconut chicken has both sweet and savoury flavours and is the best served with a fresh scoop (or two) of white rice.

- 6 Chicken Thighs boneless, skinless, cut in cubes
- 1 Can Coconut Milk
- 1 Tbsp Chicken Bouillon Powder
- 1 Whole Pineapple cut in chunks
- 1/2 White Onion cut in chunks
- 1 Clove Garlic minced
- 1 1/2 Bell Pepper cut in chunks
- 1 Handful Spinach
- 1 Tsp Dried Basil
- 1 Tbsp Oil any oil works
- Salt to taste
- Pepper to taste
- Green Onions garnish
In a medium pot, set the burner to medium heat and add in oil.
Saute the onion and garlic until fragrant then add the chicken. Let the chicken cook until nice and browned.
Next, add in your basil, salt, pepper and chicken bouillon.
Once everything is well combined, add in your coconut milk and let simmer.
Lastly, add in your pineapple, bell peppers, and spinach and cover for another 10-15 minutes.
Serve and enjoy on top of rice!
