Have you ever seen those rice dishes that are served in an open pineapple or coconut? Aren’t they the cutest!

Although I don’t have rice every day, my husband is a big fan of rice and has it every day for dinner and sometimes lunches as well which means I always need to get creative and think of new things to cook!

This delicious pineapple coconut chicken has both sweet and savoury flavours and is the best served with a fresh scoop (or two) of white rice.

This pineapple coconut chicken dish is similar to a Thai curry where they use coconut milk for creaminess. This is a super filling and hearty dish. The coconut milk really sets this dish to the top!

I know pineapples are always a hit and miss but I like pineapples in this dish and in curry but don’t love it on pizzas, burgers, and sandwiches! It’s really weird.

WHERE CAN I FIND THESE INGREDIENTS?

You can find the ingredients for this pineapple coconut chicken dish at any grocery store. Coconut milk is very popular in Asian cuisine so if you can’t find coconut milk in your regular grocery store, you’ll have to check out your local Asian grocery store.

WHAT ARE THE INGREDIENTS?

The ingredients for this Pineapple Coconut Chicken is:

  • Chicken Thighs
  • Coconut Milk
  • Pineapple
  • Chicken Bouillon Powder
  • Onion
  • Garlic
  • Bell Peppers
  • Spinach
  • Basil
  • Oil
  • Salt (to taste)
  • Pepper (to taste)
  • Green Onions (to garnish)

WHAT EQUIPMENT DO I NEED?

This Pineapple Coconut Chicken is cooked on the stove in a pot so there is no additional equipment needed for this dish.

CAN I SUB ANYTHING OUT?

You sure can! For this dish, I would keep the pineapple and coconut milk as these 2 ingredients are what makes the dish stand out. You can switch real pineapple for canned pineapple if that’s what’s available to you!

As for the chicken, you can substitute it for a protein for your choice. I could see this tasting equally delicious using firm tofu and vegetable broth instead of chicken bouillon.

The veggies are totally up to you and what you have. I wanted to have bell peppers and spinach for a little green! You can additionally add enoki mushrooms, potatoes, snap peas, bok choy, etc!

WHAT DOES IT TASTE LIKE?

This dish is the best mix of both sweet and savoury. Every bite you get a taste of both. The sweetness from the pineapple and bell peppers and the savouriness of coconut milk mixed with chicken, seasonings and bouillon makes this dish so delicious!

If you’ve had Thai curries, the base of this recipe is similar to this but usually have the green/yellow/red curry paste/powder as well as lime, cilantro, and ginger.

HOW LONG DOES IT KEEP FOR?

This pineapple coconut chicken is good in the fridge for up to 7 days in an airtight container. Alternatively, you can store this in the freezer for up to one month in case the batch is too big!

WHAT GOES WITH THIS PINEAPPLE COCONUT CHICKEN?

  • A scoop or two of fresh rice
  • Naan or pita
  • Vermicelli noodles

Pineapple Coconut Chicken

Ingredients

  • 6 Chicken Thighs boneless, skinless, cut in cubes
  • 1 Can Coconut Milk
  • 1 Tbsp Chicken Bouillon Powder
  • 1 Whole Pineapple cut in chunks
  • 1/2 White Onion cut in chunks
  • 1 Clove Garlic minced
  • 1 1/2 Bell Pepper cut in chunks
  • 1 Handful Spinach
  • 1 Tsp Dried Basil
  • 1 Tbsp Oil any oil works
  • Salt to taste
  • Pepper to taste
  • Green Onions garnish

Instructions

  • In a medium pot, set the burner to medium heat and add in oil.
  • Saute the onion and garlic until fragrant then add the chicken. Let the chicken cook until nice and browned.
  • Next, add in your basil, salt, pepper and chicken bouillon.
  • Once everything is well combined, add in your coconut milk and let simmer.
  • Lastly, add in your pineapple, bell peppers, and spinach and cover for another 10-15 minutes.
  • Serve and enjoy on top of rice!

I’m craving this for dinner all over again! Luckily, I have some stored in the freezer to heat up sometime this week. I love how flavorful this dish is!
