WHERE CAN I FIND THESE INGREDIENTS?
These ingredients are super easy to find! You’ll need a gingerbread spice mix, which you can make yourself with my recipe, or you can buy pre-made! Gingerbread spice mix is normally available from October to December, but it’s super easy to make any time of year! Aside from this, you’ll need some rolled oats, milk, brown sugar, vanilla extract and some Greek yogurt! For some extra cuteness, you can add a mini gingerbread man on top, too!!
WHAT ARE THE INGREDIENTS?
Here are the ingredients to make this delicious Chrismassy make ahead breakfast:
- Rolled Oats
- Milk (your choice!)
- Brown Sugar
- Vanilla Extract
- Gingerbread Spice Mix
- Vanilla Greek Yogurt
- Mini Gingerbread Men (optional)
WHAT EQUIPMENT DO I NEED?
We LOVE when recipes don’t require a lot of equipment and this one of them! You can make them directly in the container that you are eating it out of and aside from that, just a some measuring cups and spoons to ensure everything is measured and also possibly a spoon to just mix everything together!

Yes, you can! I highly encourage substituting or adding any ingredients that you’d like to make this recipe more tailored to you and your dietary needs! Here are some ideas for what you can do to spruce up this recipe!
- Adding some chocolate chips! YUM
- Adding cocoa powder to make it a chocolate and gingerbread situation
- Adding some chia seeds for extra fibre and protein
- Using your milk of choice
- Using your sweetener of choice
- Adding Christmas sprinkles because why not!

The texture is thick and creamy, with just the right amount of sweetness, making it feel indulgent but still nourishing. It’s like waking up to holiday magic in a jar!
HOW LONG DOES IT KEEP FOR?
Gingerbread Overnight Oats typically last in the fridge for about 3–5 days in an airtight container or sealed jar. I highly recommend to not freeze this as the oats can turn mushy as it defrosts since the ice will create more liquid! The texture will definitely not be the same. For best flavor and texture, try pre-making these and consuming them within the first 2–3 days. it is so easy to meal prep so don’t worry about having to make them again!

I love all things gingerbread, just like I like all things pumpkin spice, so when I made my own batch of gingerbread spice mix, my brain was bursting with ideas! I loved making my Pumpkin Spice Overnight Oats and knew I NEEDED to make a gingerbread version, and I absolutely love it!!

Gingerbread Overnight Oats
Ingredients
- 1/2 Cup Rolled Oats
- 1/2 Cup Milk
- 1 Tbsp Brown Sugar
- 1/2 tsp Gingerbread Spice Mix
- 1/4 tsp Vanilla Extract
- 1 Tbsp Vanilla Greek Yogurt
- Mini Gingerbread Man
Instructions
- In a container of choice (with a lid), add in your oats, milk, brown sugar, gingerbread spice mix, and vanilla extract.
- Stir until well combined, then add a scoop of vanilla yogurt on top with a mini gingerbread man and store in the fridge overnight.
- Next day, grab your breakfast and enjoy!!
