It’s that time of year when I try and make things everything pumpkin spice flavoured including my on-the-go breakfast. I’m the type of person to enjoy pumpkin spice all year round and make my own pumpkin spice recipes at home whenever I want. I’m talking pumpkin spice coffee in June!

During college, I had to basically force myself to eat breakfast and what better than to make a quick and easy overnight oats recipe. I normally make apple pie overnight oats but I switch it up with pumpkin spice too!

HERE IS HOW TO MAKE PUMPKIN SPICE OVERNIGHT OATS:

WHERE CAN I FIND THESE INGREDIENTS?

You can find the ingredients to make these pumpkin spice overnight oats anywhere! Thankfully every ingredient is pretty much a pantry item aside from the milk of choice. The ingredients for this include rolled oats, milk, brown sugar, maple syrup, pumpkin spice, and pumpkin puree!

WHAT ARE THE INGREDIENTS?

The ingredients to make this pumpkin spice overnight oats are:

  • Rolled Oats
  • Oat milk (or milk of choice)
  • Brown Sugar
  • Pure Maple Syrup
  • Pumpkin Spice
  • Pumpkin puree

WHAT EQUIPMENT DO I NEED?

You don’t need any special equipment for this overnight oats recipe! I made mine in my pumpkin ceramic because I’m extra haha but it’s definitely not needed. Not equipment but the ingredients for this can be bought online as they are pantry items!

CAN I SUBSTITUTE/ADD ANYTHING OUT?

You sure can substitute or add anything you’d like to this pumpkin spice overnight oats recipe! For me, I love to add in whatever fruits I have at home like an apple, banana or some berries or some seeds for extra protein!

You can use the sweetener of your choice if maple syrup and brown sugar aren’t for you or if you have sugar restrictions. As for the milk, you can use whatever milk you’d like! I love oat milk so it’s really the only milk in my house that I ever have but regular dairy milk is fine or whatever substitutes you’d like will do fine as well.

WHAT DO PUMPKIN SPICE OVERNIGHT OATS TASTE LIKE?

Pumpkin spice overnight oats taste literally pumpkin spice flavoured anything! Pumpkin spice is made of cinnamon, nutmeg, cloves and ginger so you get all those flavours! Oatmeal of course has the same oatmeal texture and is perfect for breakfast or even dessert if you’re looking for a filling dessert option!

HOW LONG DOES IT KEEP FOR?

The tricky thing with oatmeal is definitely the texture so I recommend making overnight oats literally the night before you eat it to avoid a super slimy texture! Some people meal prep for the week which is fine but just for preference, I usually just make mine the night before for the best texture and taste. Always keep it refrigerated as well!

INSPIRATIONS FOR THIS RECIPE?

It’s always been hard for me to eat breakfast in the morning since I was younger to this day and I’ve been working at being better at it! I had to find a way to really enjoy my breakfasts and that meant making breakfasts in the flavours that I enjoy which more or less are fall flavours.

I love fall flavours like pumpkin spice, salted caramel, apple, pear and the list goes on so these pumpkin spice overnight oats are exactly what I needed to help me eat breakfast!

Pumpkin Spice Overnight Oats

If you love all things fall, this Pumpkin Spice Overnight Oats recipe is for you. It’s full of pumpkin spice and a touch of sweet brown sugar that will help you get through those morning coffee meetings or early class days.

Ingredients
  

  • 1/2 Cup Rolled Oats
  • 1 Cup Oat Milk or milk of choice!
  • 1/2 Tbsp Brown Sugar
  • 1/2 Tbsp Maple Syrup
  • 1 Tsp Pumpkin Spice
  • 2 Tbsp Pumpkin Puree

Instructions
 

  • In a container of choice (with a lid), add in your oats, milk, maple syrup, brown sugar, pumpkin spice and pumpkin puree.
  • Stir until well combined then store in the fridge overnight.
  • Next day, top with your favorite toppings like pumpkin seeds, fruits and extra pumpkin spice and enjoy!

This Spicy Ground Beef Coleslaw Bowl is a bold, flavorful meal made with seasoned beef, crunchy coleslaw, and a zesty kick. It’s a quick, protein-packed dish perfect for lunch or dinner!

INGREDIENTS
* 100 g Lean Ground Beef cooked however you’d like
* 120 g Black Beans cooked however you’d like 
* 150 g Raw Coleslaw Mix 
* 1-2 tbsp Buffalo Sauce

INSTRUCTIONS
* In a small bowl, heat up your ground beef and black beans for 45 seconds in the microwave.
* In a large bowl, add in your raw coleslaw mix then top your ground beef and black beans on top.
* Drizzle the bowl with your buffalo sauce, eat and enjoy!

* 100g Lean Ground Beef – 217 cals, 26g of protein, 12g of fat
* 120g Black Beans – 158 cals, 10.7g of protein, 0.6g of fat, 28.4g of carbs

3 Ingredient Crunchy Furikake Chickpeas! High Fibe 3 Ingredient Crunchy Furikake Chickpeas! High Fiber High Protein Snack!! 🍙

INGREDIENTS
* 1/4 Cup Chickpeas (dehydrated then rehydrated for 24 hours or canned)
* 1-3 Tbsp Furikake Seasoning put as much as you’d like! I put extra on mine <3
* 1 Tbsp Avocado Oil or any oil you prefer!

INSTRUCTIONS
* In a bowl, add in your chickpeas and oil. Mix well together so that every chickpea is coated in oil.
* Add your chickpeas in a single layer in your air fryer. Air fry at 400F for about 10-15 minutes depending on your preferred level of crunch!
* Pour chickpeas into a bowl and add in your furikake seasoning to toss in.
* Serve and enjoy!
