I am on a pistachio kick lately and have been incorporating lots of pistachio flavours into my diet! I have been really into chia seed puddings as I’m on a mission of increasing my fiber intake as much as I can!

HERE IS HOW TO MAKE PISTACHIO CHIA SEED PUDDING:

WHERE CAN I FIND THESE INGREDIENTS?

The ingredients to make this yummy pistachio chia seed pudding can be found anywhere but this recipe only contains 3 ingredients!! YES! 3! You’ll need your favorite milk of choice, chia seeds and yummy pistachio spread. You should be able to find everything at your local grocery store but if you do have any issues, you’ll also be able to order some things online like the pistachio spread! I got my Sweet Italian Pistachio Cream from Amazon!

WHAT ARE THE INGREDIENTS?

The ingredients to make this delicious pistachio pudding are:

  • Chia Seeds
  • Milk of your choice!
  • Pistachio Spread
  • Any toppings you’d like! (optional)

WHAT EQUIPMENT DO I NEED?

All you need for this is a jar that you can eat straight out of! Honestly, I just sometimes use a bowl and saran wrap the top but I also love small mason jars! Aside from that, you’ll need some measuring cups and spoons to be precise with the measurements and just a spoon to mix everything together.

CAN I SUBSTITUTE/ADD ANYTHING OUT?

This recipe is just a super basic chia seed pudding recipe so please feel free to make any substitutions or add anything into it to make it your own! Here are s few suggestions of what you can add in!

  • Crushed pistachios or any other nuts or seeds
  • Chocolate chips or chunks of your choosing
  • Extra pistachio spread on top
  • Some frozen or fresh fruits like berries
  • Crunchy granola
  • Sweetener like maple syrup or honey for extra sweetness
  • Greek Yogurt for more protein and creaminess
  • Shredded coconut

WHAT DOES PISTACHIO CHIA SEED PUDDING TASTE LIKE?

This pistachio chia seed pudding has a delicious creamy, nutty and lightly sweet flavour. The pistachio spread itself is not too sweet and is perfect for a hearty breakfast! The texture is creamy and thick so if you want it to be lighter, you can add more milk, but chia seed pudding itself is gelatinous and gives off a jelly but crunchy feel.

HOW LONG DOES IT KEEP FOR?

The chia seed pudding keeps for a while! I really enjoy meal prepping jars of this in batches of 4. I find that the texture mostly stays the same, but chia seeds do an excellent job of absorbing all liquids, so by day 4, it is quite thick! I recommend thinning it out with a couple of tablespoons of milk. Make sure to store in an airtight container if you’re meal prepping for the best fresh texture!

INSPIRATIONS FOR THIS RECIPE?

I have been loving all things pistachio and need wanted to make a high fiber breakfast/dessert! I have been trying to focus on eating more high fiber in my diet and chia seed puddings have been it! Pistachio spread has made me weak and is my latest obsession!!

Pistachio Chia Seed Pudding

This Pistachio Chia Seed Pudding is a creamy, nutritious treat that's perfect for breakfast, meal prep, or a healthy dessert! Made with pistachio butter, chia seeds, and your favorite milk, it’s packed with fiber, protein, and delicious nutty flavor. Easy to make ahead and naturally dairy-free and gluten-free!

Ingredients
  

  • 2 Tbsp Chia Seeds
  • 1/2 Cup Milk
  • 1 Tbsp Pistachio Spread

Instructions
 

  • In a jar, add in your chia seeds, milk and pistachio spread.
  • Mix together until well combined and let chill in the fridge for minimally 4 hours.
  • Serve and enjoy!

This Kimchi Avocado Toast is tangy, creamy, and perfect for a gut-friendly breakfast! Buttery avocado meets tangy, spicy kimchi for the perfect balance of richness and heat! All this layered on crispy toast makes for an easy, satisfying breakfast to start your day.

INGREDIENTS
* 1 Slice Sourdough Bread toasted 
* 1/2 Ripe Avocado mashed
* 1/4 Cup Kimchi chopped
* 1 Egg
* 1 Tbsp Butter or Oil to cook the egg
* Salt to taste

INSTRUCTIONS
* Toast the sourdough slice until your preferred toast level!
* Spread the mashed avocado evenly over the toast. Sprinkle lightly with salt.
* Heat butter or oil in a small pan over medium heat. Crack in the egg and cook to your preference (fried, sunny-side up, or over-easy).
* Spoon the chopped kimchi over the avocado layer.
* Top with the cooked egg, serve and enjoy!
