A tub of kimchi HATES to see me coming 😂 I always buy a giant tub of kimchi at Costco and within a week, it is gone! I got through phases where all I want to eat is kimchi so I’ve had to get creative with how I eat it!

HERE IS HOW TO MAKE KIMCHI AVOCADO TOAST:

WHERE CAN I FIND THESE INGREDIENTS?

All you’ll need for this recipe is 5 ingredients! It is so easy and perfect if you want to have a warm hearty breakfast and don’t have a lot of time. You can find these ingredients in most grocery stores! Kimchi used to be a bit harder to find in the past but should be available in the refridgerated section in most bigger grocery chains!

Aside from that, you’ll want to have some bread, I use sourdough bread as it’s by favorite but you can use any kind of bread and an avocado! In this recipe I include a fried egg but that is of course optional!

WHAT ARE THE INGREDIENTS?

The ingredients to make this buttery and tangy toast are:

  • A slice of sourdough bread
  • Chopped kimchi
  • Half a ripe avocado
  • 1 egg
  • Salt to taste
  • A bit of oil or butter to fry the egg with

WHAT EQUIPMENT DO I NEED?

You don’t need much equipment for this recipe thankfully! All you’ll need is a chopping board and knife to chop up the kimchi and cut the avocado open then a small frying pan and spatula for the egg!

CAN I SUBSTITUTE/ADD ANYTHING OUT?

This recipe is super easy but you can totally substitute or add anything you’d like! Here are some ideas you can do to change up this recipe!

  • Add some cheese like feta or fresh mozzarella
  • Add some diced tomato
  • Add some thinly sliced onions
  • Add some fresh herbs like cilantro or dill

WHAT DOES KIMCHI AVOCADO TOAST TASTE LIKE?

Kimchi avocado toast tastes bold, creamy, and perfectly punchy. 🥑🔥

The avocado is smooth, buttery, and mild, creating a rich base that melts into the crispy toast. Then the kimchi hits with the tangy, spicy, and slightly sour notes. The contrast is what makes it so good: cool and creamy meets bright and spicy, with a little crunch and a lot of umami!

It’s fresh, flavorful, and a little addictive like your everyday avocado toast decided to wake up and choose chaos (in the best way).

HOW LONG DOES IT KEEP FOR?

Kimchi avocado toast is best enjoyed fresh! I’ve never really stored avocado toast in the fridge or freezer so i have no idea what it turns out but we all know that avocado gets brown reaaaal quick! This recipe truly takes about 10 minutes but if you really do not have the time, this would be better to make on a slow weekend morning! Toast/bread can get stale/soggy really quick so I would not recommend not eating it fresh!

INSPIRATIONS FOR THIS RECIPE?

I love a good avocado toast for breakfast! Honestly, my go-to breakfast every single day is a slice of sourdough toast with salted butter, a boiled egg and a chocolate protein iced latte! I never really get sick of this breakfast, however, whenever I want to freshen my palette and avocados are on sale and looking nice, I have a week of avocado toast!

I always find avocado toast to be so rich so when I had kimchi in the fridge, I thought wait a minute… you know what kimchi and avocado sounds fire!! So, I tried it one day and haven’t gone back! Whenever, I had kimchi and avocado at home, I will make a delicious kimchi avocado toast!

This Kimchi Avocado Toast is tangy, creamy, and perfect for a gut-friendly breakfast! Buttery avocado meets tangy, spicy kimchi for the perfect balance of richness and heat! All this layered on crispy toast makes for an easy, satisfying breakfast to start your day.

Ingredients
  

  • 1 Slice Sourdough Bread toasted
  • 1/2 Ripe Avocado mashed
  • 1/4 Cup Kimchi chopped
  • 1 Egg
  • 1 Tbsp Butter or Oil to cook the egg
  • Salt to taste

Instructions
 

  • Toast the sourdough slice until your preferred toast level!
  • Spread the mashed avocado evenly over the toast. Sprinkle lightly with salt.
  • Heat butter or oil in a small pan over medium heat. Crack in the egg and cook to your preference (fried, sunny-side up, or over-easy).
  • Spoon the chopped kimchi over the avocado layer.
  • Top with the cooked egg, serve and enjoy!

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.
* In a small bowl, whisk together garlic, sesame oil, sesame seeds, soy sauce, brown sugar, and rice vinegar until well combined.
* Pour the sauce over the salad and toss until evenly coated.
* Chill in the fridge before serving for extra flavor for minimally 12 hours! Enjoy!

Have you ever tried Costco’s almond poppy seed muffins? If you have, this is a copycat version of it! It’s my fav muffin and I knew I had to recreate it at home!

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar
* 2 Eggs
* 1 tsp Vanilla Extract
* 1 Tbsp Almond Extract 
* 3/4 Cup Sour Cream
* 1/4 Cup Milk
* 2 Tbsp Poppy Seeds
* 1/4 Cup Slivered Almonds sprinkle on top

INSTRUCTIONS
* Preheat oven to 350°F and line a 12-cup muffin tin with liners or lightly grease it.
* In a large bowl, whisk together oil, sugar, eggs, vanilla extract, almond extract, sour cream, and milk until smooth.
* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.
* Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
* Let cool slightly before serving.

* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
