I’m going to write a disclaimer right now… BEWARE! These cookies are so dang good, you will ditch all other meals to eat these haha! I’m kidding, but not because my husband and I have been going through these cookies so easily! These cookies take a classic chocolate chip cookie to another level with a warm gingerbread spice mix! ❄️

HERE IS HOW TO MAKE GINGERBREAD CHOCOLATE CHIP COOKIES:

WHERE CAN I FIND THESE INGREDIENTS?

For this recipe, it’s truly super easy! If you have ever made a chocolate chip cookie before, you’re probably already familiar with the ingredients! You’ll need some pantry staples like all-purpose flour, baking soda, brown and white sugar, vanilla extract and chocolate chips, then some dairy products like butter and eggs and of course the star of the show, Gingerbread Spice Mix, and mini gingerbread men cookies (optional)!

WHAT ARE THE INGREDIENTS?

Here are the ingredients to make these delicious cookies!

  • All-purpose flour
  • Baking Soda
  • Brown Sugar
  • White Sugar
  • Vanilla Extract
  • Melted Unsalted Butter
  • Salt
  • Eggs
  • Chocolate Chips
  • Gingerbread Spice Mix
  • Mini Gingerbread Men Cookies

WHAT EQUIPMENT DO I NEED?

If you’re already someone who loves to bake! You should already have everything that you need to make these cookies, but if you’re not, you’ll just need some baking items like mixing bowls, spatulas or a wooden spoon, measuring spoons and cups, parchment paper and baking trays! Baking can get a little bit messy, especially if you’re like me haha! I am a messy baker, but it’s always so worth it, and the best thing is that you can clean as the cookies are baking!

CAN I SUBSTITUTE/ADD ANYTHING OUT?

I wouldn’t say that I am the best person to ask about substituting ingredients for baking, as I bake very easy things, BUT here are some ideas you can take to change up this recipe!

  • Adding cocoa powder to make it a gingerbread double chocolate chip cookie recipe
  • Adding in some nuts for a crunch like pistachios, almonds, pecans or walnuts
  • Using different chocolates like milk chocolate, dark chocolate or white chocolate chips
  • Adding a cream cheese frosting on top like my Gingerbread Cream Cheese

WHAT DO GINGERBREAD CHOCOLATE CHIP COOKIES TASTE LIKE?

Gingerbread chocolate chip cookies taste like holiday magic in every bite! They’re soft, chewy, and warmly spiced with ginger, cinnamon, nutmeg, and cloves, giving that classic cozy gingerbread flavor. Pockets of melty chocolate add sweet, rich indulgence that balances the spices perfectly. Each bite is comforting and festive! I can’t rave enough about these cookies!

HOW LONG DOES IT KEEP FOR?

Gingerbread chocolate chip cookies typically last at room temperature about 5-7 days, just be sure to store them in an airtight container! I don’t know why but I prefer cold cookies for some reason over warm ones! Don’t get me wrong, I love a warm cookie, but I think I like it when the chocolate chips give me more of a bite and are more chewy, so I like it cold! If you like cold cookies, you can keep them for up to 2 weeks in the fridge!

If you don’t think you can make it through all these cookies, you can roll the dough and store it in the freezer and just bake a few at a time so they are always fresh, OR you can already bake them and just thaw them at room temperature before enjoying! For the freezer, I recommend just storing them either cooked or in dough form for up to 3 months!

INSPIRATIONS FOR THIS RECIPE?

Yes! Okay, I don’t mean to toot my own horn, but I’ve perfected my chocolate chip cookie recipe to my tastes, so because I have this base, I have been able to experiment a lot with different flavours! I knew I wanted to do all things gingerbread this year and had to make a gingerbread chocolate chip cookie!

ANY OTHER NOTES?

The gingerbread men on top are totally optional! These cookies are so dang good with or without them! I honestly just used the gingerbread men to make them cute, and I found them at my local bulk shop for cheap!

Gingerbread Chocolate Chip Cookies

These Gingerbread Chocolate Chip Cookies are soft, chewy, and full of warm holiday spice with melty pockets of chocolate in every bite. They’re the perfect blend of cozy gingerbread flavour and classic chocolate chip goodness! They are impossible to resist!

Ingredients
  

  • 2 Cups All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1 Cup Brown Sugar
  • 2 tsp Vanilla Extract or vanilla bean paste!
  • 1/4 Cup White Sugar
  • 1/2 Cup Melted Unsalted Butter
  • 2 Eggs
  • 1/2 tsp Salt
  • 1 Cup Chocolate Chips
  • 1/2 Tbsp Gingerbread Spice Mix
  • 16-20 Mini Gingerbread Men 1 per cookie but the amount may vary depending on how big you roll your cookies!

Instructions
 

  • Preheat your oven to 350F and line a baking sheet with parchment paper.
  • In a large mixing bowl, add in your melted butter, brown and white sugar, salt, gingerbread spice mix, vanilla extract and eggs. Whisk together until well combined.
  • Next, slowly add in your all purpose flour and baking soda and mix all together until it forms a soft cookie dough.
  • Lastly, fold in your chocolate chips just so they are evenly distributed and be careful not to overmix!
  • Scoop out cookie dough into even 2 inch balls or size of your choice, spaced 2 inches apart and place on the cookie tray. The cookie dough balls do not need to be perfect then press a mini gingerbread man on top!
  • Bake for 10-17 minutes or until golden brown. The baking times depend on your cookie sizes. The cookies in these blog photos I baked for 15 minutes until the edges were brown, but they were large cookies! You can set a timer for 12 minutes then just check on them and see if they need more time 🙂
  • Once baked to your liking, cool, serve and enjoy!

This Kimchi Avocado Toast is tangy, creamy, and perfect for a gut-friendly breakfast! Buttery avocado meets tangy, spicy kimchi for the perfect balance of richness and heat! All this layered on crispy toast makes for an easy, satisfying breakfast to start your day.

INGREDIENTS
* 1 Slice Sourdough Bread toasted 
* 1/2 Ripe Avocado mashed
* 1/4 Cup Kimchi chopped
* 1 Egg
* 1 Tbsp Butter or Oil to cook the egg
* Salt to taste

INSTRUCTIONS
* Toast the sourdough slice until your preferred toast level!
* Spread the mashed avocado evenly over the toast. Sprinkle lightly with salt.
* Heat butter or oil in a small pan over medium heat. Crack in the egg and cook to your preference (fried, sunny-side up, or over-easy).
* Spoon the chopped kimchi over the avocado layer.
* Top with the cooked egg, serve and enjoy!
