HERE IS HOW TO MAKE COFFEE CRUNCH COOKIES:

WHERE CAN I FIND THESE INGREDIENTS?

You can find the ingredients to make pistachio pudding cookies at most grocery stores. Look for pistachio pudding mix, flour, sugar, butter, baking soda, vanilla extract, and optionally, white chocolate chips or chopped pistachios.

WHAT ARE THE INGREDIENTS?

The ingredients to make these delicious pistachio cookies are:

  • Unsalted Butter
  • Egg
  • Brown Sugar
  • White Sugar
  • Jell-O’s Pistachio Pudding Mix
  • Baking Soda
  • Salt
  • Vanilla Extract
  • Flour
  • Crushed Pistachios (optional)

WHAT EQUIPMENT DO I NEED?

If you love baking or have ever made cookies before you should already have everything you need! If you’re a new baker and don’t have everything you need, you can purchase some things that will last you a long time! You’ll want some mixing bowls, measuring cups/spoons, cookie dough scoops, baking trays and an electric mixer! Personally, you can delay purchasing a cookie scoop and electric mixer if you wanted to do things by hand but it does make life easier!

Here are some of my Amazon baking favs!

CAN I SUBSTITUTE/ADD ANYTHING OUT?

I’m going to straight up admit right here that I’m not the best baker so I wouldn’t be able to really recommend what substitutions you could make that would keep the cookie recipe still taste great but there are tons of recommendations that you can Google for swaps! I pretty much use this base cookie recipe a lot so I trust it!

What you can do is add some things to these cookies! Some additions you can make are:

  • Add chopped nuts like almonds, walnuts, pistachios or seeds etc
  • Add some chocolate chips
  • Add dried fruit chunks
  • Add shredded coconut

WHAT DO PISTACHIO PUDDING COOKIES TASTE LIKE?

Pistachio pudding cookies have a distinctively nutty and sweet flavor from the pistachio pudding mix. They are often soft, chewy, and slightly buttery with a hint of vanilla. These cookies are the perfect texture if you like both a crunchy/crispy and cakey cookies. The first bite is so delicious and crunchy then you get to the middle and it’s super soft and cakey. It is perfect with an afternoon tea or coffee!

HOW LONG DOES IT KEEP FOR?

Pistachio Pudding Cookies can be stored in an airtight container at room temperature for up to 5-7 days. For longer storage, they can be kept in the refrigerator for up to 2 weeks or frozen for up to 3 months. I freeze mine and just thaw it out for an hour on the counter before eating! They have never lasted more than a week in my household!

INSPIRATIONS FOR THIS RECIPE?

I absolutely love the flavour of pistachio. Anytime I visit a bakery or cafe, if there is a pistachio flavoured anything, I’m getting it! I always love making my Pistachio Pudding Bread and thought this would be just as delicious in a cookie form!

In the past, cookies would not be the first dessert that I would choose but it’s growing on me! I now crave freshly baked and warm cookies as an afternoon pick me up!

ANY OTHER NOTES?

Indulge in the nutty goodness of these pistachio pudding cookies! Whether for a holiday treat or a sweet snack, they’re sure to impress with their soft texture and rich flavor. Don’t wait—bake a batch today and delight in every delightful bite!
