Brownie Nutella Cookies

It was Saturday around 930pm when my brain said “You know what it would be awesome? Brownie Nutella Cookies!” So in Lynn fashion, I stayed up late and recipe-tested Brownie Nutella Cookies and they did not disappoint!

These Brownie Nutella Cookies are super fudgy and not too sweet. The only thing that makes these super sweet is the Nutella but the good thing about them is that you can tailor how much you put on top!

This was a weird craving or thought for me because I have to admit, I’m not the biggest fan of chocolate! I definitely don’t go into a bakery and get an item that has chocolate chips or brownies/chocolate cake in general.

I’ve been seeing a lot of things online saying Nutella is overrated! How do you feel about it? Do you enjoy Nutella spread? I’d love to know in the comments below!

We are definitely a household that loves Nutella! I’m never dedicated for a spread and love to have different things on my toast! Cookie butter is also a big one for me!

I actually made these the night before Mother’s Day which was perfect to bring to the picnic the following day with my in-laws. My family especially the little kiddos in my life are obsessed with Nutella! When I get to see my nieces and nephews again, I’ll make sure to bake them a fresh batch.

These Brownie Nutella Cookies are perfect for people who love a fudgy dessert and it’s the kind of fudgy that could get stuck in your teeth so make sure to do a bunch of teeth checks!

HERE IS HOW TO MAKE Brownie Nutella Cookies:

WHERE CAN I FIND THESE INGREDIENTS?

Love this one as everything was pretty much in my pantry which was great as I had this idea late at night! Everything is pretty standard if you are big into baking. If you’re a new baker like me, everything can be bought at your local grocery store!

WHAT ARE THE INGREDIENTS?

These are the ingredients for Brownie Nutella Cookies:

  • Unsalted Butter
  • Light Brown Sugar
  • Granulated Sugar
  • Light Brown Sugar
  • Egg
  • All-Purpose Flour
  • Baking Soda
  • Salt
  • Instant Coffee
  • Cocoa Powder
  • Nutella
  • Icing Sugar (Optional -To dust)

WHAT EQUIPMENT DO I NEED?

This recipe will require dry and wet ingredients in two separate bowls as well as a bowl to melt a bit of Nutella in the microwave. You’ll need a cookie sheet lined with parchment paper and of course, an oven! Last thing and hopefully you already have these but you’ll need a Spatula to mix and if you have a cookie scoop, your cookies will be even and the perfect size but if not, then just use a spoon and scoop it out as evenly as you can.

CAN I SUB ANYTHING OUT?

I suggest you sub absolutely nothing out for this one! It is perfect the way it is. The instant coffee granules are probably the one ingredient that people would question so you can leave it out BUT it does make the brownie flavour richer! If you’d like to add 1 Cup of Chocolate Chips that would be okay but it will make the cookie really sweet! If you really really don’t like Nutella, honestly it’s up to you to sub any spread you’d like! Any nut butter, peanut butter, cookie butter would all be great!

WHAT DOES IT TASTE LIKE?

The Brownie cookie itself is really really good. It’s chewy and fudgy! I loved just eating them without the Nutella but the Nutella really set it together. I don’t have much to say for taste on this one as the title really says it all!

HOW LONG DOES IT KEEP FOR?

These cookies are honestly the best. I still have some in the fridge a week later. They are delicious cold but if you want to warm it up a soften it, just add one to a plate and heat it up for 10-20 seconds. I just kept them in an airtight container. You can freeze the unbaked batter as well for up to 1 month if you prefer making small fresh batches more often. As I brought these to a party, I baked them all at one time. When storing the cookies, you can’t stack them as the Nutella is really soft and will make the cookies stick together.

ANY OTHER NOTES?

No additional notes for these amazing Brownie Nutella Cookies! I really enjoyed baking these as a late-night treat. They were super easy and delicious! These cookies will make those who don’t have self-control with brownies weak!

These Brownie Nutella Cookies are the best and delicious brownie cookies out there! They are chewy fudgy and the perfect brownie-like texture. The soft Nutella on top, takes this cookie to the next level!

Ingredients
  

  • 1 Cup All-Purpose Flour
  • 1 Tsp Baking Soda
  • 1/8 Tsp Salt Or a dash of salt
  • 1/2 Tbsp Instant Coffee
  • 1/3 Cup Unsweetened Cocoa Powder
  • 1/2 Cup Unsalted Softened Butter
  • 3/4 Cup Light Brown Sugar
  • 1/4 Cup Granulated Sugar
  • 1 1/2 Tsp Vanilla Extract
  • 1 Egg
  • 1/4 Cup Warm Nutella
  • Icing Sugar (Optional) To dust

Instructions
 

  • Preheat oven to 350 degrees F.
  • With a mixer, cream the butter and sugar til well combined and fluffy (about 3-4 minutes).
  • Add in the vanilla and egg and mix again to combine.
  • In a seperate bowl, whisk together flour, baking soda, salt, coffee and cocoa powder.
  • Slowly start to add in your dry ingredients into the wet ingredients bowl.
  • Once everything is well combined together, portion out the cookies and place them on a parchment lined baking sheet.
  • Bake for 8 minutes or until the edges are firm and allow them to cook completely on a wire rack.
  • Microwave the Nutella in 20 second increments until it is smooth to spread on top.
  • Take a cooled cookie and spread a thin layer of nutela on top. Repeat for each cookie.
  • Dust with icing sugar on top and enjoy!

Beware because these are so good! I easily ate half a dozen immediately! I gave some to the family as well so it makes the perfect treat to give away. These are pretty much always a hit as people love Nutella and it’s nice because it’s peanut-free too.

Cookies are the perfect quick dessert and for gifts, gatherings, etc. They are also so beginner-friendly for someone like me who is still grasping baking as a hobby! Also, all the ingredients are so simple that you almost always have this in your house unless you’ve run out and have it on your next grocery list!

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.
* In a small bowl, whisk together garlic, sesame oil, sesame seeds, soy sauce, brown sugar, and rice vinegar until well combined.
* Pour the sauce over the salad and toss until evenly coated.
* Chill in the fridge before serving for extra flavor for minimally 12 hours! Enjoy!

* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.
* Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil

INGREDIENTS
* 1 Can Tuna drained
* 2 Tbsp Sriracha
* 1/4 Cup Mayo
* 1 Tbsp Sesame Oil
* 2 Tbsp Furikake
* 1 Cup White Rice cooked
* 1 tsp Sugar
* 1/2 Tbsp Rice Vinegar
* 1 Packet Seasoned Seaweed

INSTRUCTIONS
* Preheat your oven to 400F and prepare a 6-inch baking pan.
* In a bowl, add in your rice and heat it in the microwave for 1 minute. This is so it’s easier for the sugar and rice vinegar to soak in. Add in your rice vinegar and sugar and mix well.
* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
