I actually did a non-vegan version of this recipe last Thanksgiving because I had so many extra sweet potatoes and I had to use them in creative ways so I wouldn’t get sick of them. Honestly my favorite way to have sweet potatoes is just to have them boiled and served with some salted butter. My mom ate it this way so I’ve adored it ever since.

As always, I promote switching products out to tailor your taste buds because there’s not one way to enjoy my delicious mouthwatering recipes. This dish is perfect for hosting, sharing, meal prepping and so much more. Your non-vegan friends will adore this too!

HERE is how to make Vegan Creamy Coconut Sweet Potato Pasta:

WHERE CAN I FIND THESE INGREDIENTS?

Vegan products weren’t always available in many grocery stores a few years back but now, there’s tons of places you can purchase vegan alternatives. My favourite vegan brands are Gardein, Daiya and Earth’s Own. I bought specific Chickpea pasta solely just wanting to try it out but regular or another alternative pasta is fine too. I also purchased plant based butter and parmesan!

WHAT ARE THE INGREDIENTS?

  • Sweet Potatoes
  • Coconut Milk
  • Onion
  • Garlic
  • Plant Based Butter
  • Plant Based Parmesan
  • Italian Seasoning
  • Onion Powder
  • Salt
  • Pepper
  • Chili Flakes

CAN I SUB ANYTHING OUT?

You sure can! If you’re just wanting to make this vegetarian, you can use dairy products such a regular cheese or even heavy cream if you don’t like coconut. I would keep the sweet potato of course as it is our main ingredient but you can also try subbing for a purple yam as it has a similar texture and sweetness. I actually watched a Tiktok recently of this woman saying that if you don’t like regular sweet potato, purple will change your mind!

If you’d like to add a source of protein, you can definitely do some grilled chicken, steak, lentils or even use my tofu marinade and cook that on the side! In my photos I just roasted a few pieces of sweet potato in the oven with salt and pepper and added it on top.

WHAT DOES IT TASTE LIKE?

This dish tastes like Thanksgiving. I’m not joking, I tested this about a week and a half ago and it reminded me of Fall. It’s a savory sweet potato dish and the contrast of both sweet and savory is perfect. The coconut milk and Italian seasoning is definitely a pop of flavor that you wouldn’t expect but I really enjoyed it altogether.

Vegan Creamy Coconut Sweet Potato Pasta

This Vegan Creamy Coconut Sweet Potato Pasta is a savory and sweet dish. The contrast of both coconut milk and Italian seasoning is definitely a pop of flavor that you wouldn't expect but does well together!

Ingredients
  

  • 1 Serving Pasta of choice I used Chickpea pasta
  • 1 Cup Cooked & Mashed Sweet Potato
  • 1 1/2 Cup Coconut Milk
  • 1/4 Cup Diced White Onion
  • 2 Cloves Minced Garlic
  • 1 Tbsp Plant-based Butter
  • 1/4 Cup Shredded Plant-based Parmesan
  • 1 Tsp Onion Powder
  • 1/2 Tsp Pepper
  • 1/2 Tsp Salt
  • 1/2 Tsp Chili Flakes
  • Fresh Parsley to garnish
  • 1 Tsp Italian Seasoning heaping spoonful

Instructions
 

  • Fill a medium sized pot with water (about 3/4 full). Put over the stove on high heat until boiling. Salt your water generously and add in your pasta of choice. Cook for about 7-11 minutes or until al-dente.
  • Grab a saucepan and put over stove on medium heat.
  • First all in your butter to melt, then sauté your onions and garlic till fragrant.
  • Add in all your seasonings – salt, pepper, chili flakes, Italian seasoning and onion powder. Once all is well combined, add in your mashed sweet potato.
  • Next, slowly stir in your coconut milk and parmesan cheese.
  • Once your sauce is fully incorporated, taste test! If your sauce needs seasoning adjustments, go right ahead and add in what you need. If not, add in your pasta and stir through.
  • Plate, garnish with parsley and extra parm, enjoy and serve!

I actually froze half of my pasta because my husband tried it and said that it wasn’t for him so I’m stuck having it all! I generally try and stay away from rice, noodles, pasta, breads etc. most days just cause I feel a little heavier and have less energy rather than just having veggies!

    This looks delicious. I have only had sweet potatoes a couple of times and it’s always been as fries. Honestly, I haven’t really gone out of my way to add more sweet potatoes into my meals but this pasta dish looks like a great way to do it – as anything with pasta is always great. Have you ever tried Costco’s almond poppy seed muffins? If you have, this is a copycat version of it! It’s my fav muffin and I knew I had to recreate it at home!

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar
* 2 Eggs
* 1 tsp Vanilla Extract
* 1 Tbsp Almond Extract 
* 3/4 Cup Sour Cream
* 1/4 Cup Milk
* 2 Tbsp Poppy Seeds
* 1/4 Cup Slivered Almonds sprinkle on top

INSTRUCTIONS
* Preheat oven to 350°F and line a 12-cup muffin tin with liners or lightly grease it.
* In a large bowl, whisk together oil, sugar, eggs, vanilla extract, almond extract, sour cream, and milk until smooth.
* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.
* Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
* Let cool slightly before serving.

* 1 Can Tuna drained
* 2 Tbsp Sriracha
* 1/4 Cup Mayo
* 1 Tbsp Sesame Oil
* 2 Tbsp Furikake
* 1 Cup White Rice cooked
* 1 tsp Sugar
* 1/2 Tbsp Rice Vinegar
* 1 Packet Seasoned Seaweed

INSTRUCTIONS
