I LOVE ASPARAGUS! But… it is so dang expensive! I usually only purchase asparagus when it’s in season every spring for me which is March – May! Last week, I actually bought 4 bunches and my husband thought I was crazy.

It’s the perfect side dish and the flavor is so rich and earthy to me so it’s a nice balance to a roast or I just have them by itself most times!

I usually just do olive oil, salt and pepper but I wanted to try and elevate it since I had so many at hand so I came up with a delicious Lemon Butter Parmesan Asparagus recipe to share with you all!

HERE is how to make Lemon Butter Parmesan Asparagus:

WHERE CAN I FIND THESE INGREDIENTS?

Depending on where you are in the world, I’m not too sure if asparagus is an easy vegetable to find. Other than that, most of the ingredients, you will probably have readily available at home, if not, you could find them at many local stores.

WHAT ARE THE INGREDIENTS?

  • Asparagus
  • Lemon
  • Butter
  • Parmesan
  • Salt
  • Pepper
  • Garlic
  • Onion Powder

CAN I SUB ANYTHING OUT?

I wouldn’t! This recipe is easy enough but if you don’t think you’ll love lemon, butter, parmesan or garlic some really good alternatives are:

Best Ranch Roasted Asparagus from Swanky Recipes

Panko Roasted Asparagus from Rebooted Mom

Caprese Roasted Asparagus from Climbing Grier Mountain

Of course, the parmesan cheese can be swapped for any shredded cheese you prefer.

WHAT DOES IT TASTE LIKE?

Lemon definitely overpowers this one so you can definitely lessen the amount of lemon juice but I love the citrus in this! All the flavors complement each other well so other than that, perfect!

Lemon Butter Parmesan Asparagus

This side dish of Lemon Butter Parmesan Asparagus is perfect to complement your spring meals!

Equipment

Ingredients
  

  • 1 Bunch Asparagus Cut into bite size pieces
  • 3 Tbsp Melted Salted Butter
  • 4 Cloves Minced Garlic
  • 1/2 Lemon (Juiced)
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1 Tsp Onion Powder
  • Grated Parmesan to sprinkle on top

Instructions
 

  • Preheat your oven to 400 F.
  • Wash and cut your asparagus and ensure that they are dry. Place the asparagus in a baking dish.
  • Combine your melted butter, minced garlic, salt, pepper and onion powder in a separate bowl and pour asparagus. Mix everything together until each asparagus piece is coated in the mixture.
  • Squeeze fresh lemon before placing in the oven for 10 minutes at 400 F.
  • You can either grate the cheese on top after baking OR grate it on top before baking.
  • Plate, serve and enjoy!

Notes

*IMPORTANT* Squeeze the lemon last so it doesn’t make the garlic blue!

I love getting whatever veggies are in season! I can’t wait to have more spring fruits and veggies and eventually some summer ones!

    I love asparagus too, but I agree it is expensive so I don’t have it that often.
    The last time I made asparagus, I didn’t do anything special (only salt & pepper) so I should definitely elevate it next time!

    These look delicious! I always have them roasted or in a pan with oil and chilli, so I have to give this a try for sure! It’s only Simona and I eating them at home, but as you said they’re quite expensive, so it’s just a treat every once in a while.     Asparagus is one of my very favorite vegetables and my husband and I get it pretty regularly to go with either steak or pasta. It’s just so good! This Spicy Canned Tuna Sushi Bake is creamy, savory, and packed with bold flavor! Made with simple pantry ingredients, it’s an easy, budget-friendly twist on sushi! It is perfect for sharing, scooping with seaweed, and satisfying all your sushi cravings at home.

INGREDIENTS
* 1 Can Tuna drained
* 2 Tbsp Sriracha
* 1/4 Cup Mayo
* 1 Tbsp Sesame Oil
* 2 Tbsp Furikake
* 1 Cup White Rice cooked
* 1 tsp Sugar
* 1/2 Tbsp Rice Vinegar
* 1 Packet Seasoned Seaweed

INSTRUCTIONS
* Preheat your oven to 400F and prepare a 6-inch baking pan.
* In a bowl, add in your rice and heat it in the microwave for 1 minute. This is so it’s easier for the sugar and rice vinegar to soak in. Add in your rice vinegar and sugar and mix well.
* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!

INSTRUCTIONS
* In a large bowl, combine the cooked quinoa and cooked chicken breast.
* Add the diced cucumbers, tomatoes, and crumbled feta.
* In a small bowl, whisk together olive oil, balsamic vinegar, black pepper, and salt.
* Pour the dressing over the salad and toss until everything is well coated.
* Taste and adjust seasoning if needed.
* Serve immediately or chill in the fridge for 2 hours for best flavor.

Ube Butter Mochi 💜 I have been making this recipe Ube Butter Mochi 💜

I have been making this recipe for years and years now and have finally been able to post a recipe! I always whip this out whenever I have a family gathering and those are the most rushed times for me so I have never been able to film the recipe making process haha 😆 

My family is obsessed with these and I make them everytime I see them! It is the #1 requested item from me and I’m excited to share this recipe!

INGREDIENTS
* 1/2 Cup Unsalted Butter melted
* 2 Cups Granulated Sugar
* 4 Eggs
* 1 tsp Vanilla Extract
* 2 Tbsp Ube Extract
* 1 Box Mochiko Flour
* 2 tsp Baking Powder
* 1 can Evaporated Milk
* 1 can Coconut Milk

INSTRUCTIONS
* Preheat your oven to 350F and grease an 9×13 baking dish.
* In a large bowl, whisk together your butter, sugar, eggs, evaporated milk, coconut milk, ube extract, and vanilla extract until well combined. 
* Next, add in your mochiko flour and baking powder and whisk until the batter is smooth.
* Pour into baking dish in an even layer and bake in oven for 1 hour. 
* After 1 hour, let cool for 30 minutes then enjoy!
