It’s fall, y’all! Give me all the pumpkin spice, apple pie, pecan crunch goodness! What is it about fall that triggers the ultimate feeling of comfort? I can’t exactly pinpoint it, but it’s my favourite time of year!

These Caramel Apple Cheesecake Tarts are the perfect little bite-sized dessert for fall! Buttery tart shells are filled with a creamy vanilla cheesecake filling, topped with warm cinnamon-sugar apples, and finished with a generous drizzle of caramel sauce. They combine all the best flavours of apple pie, cheesecake, and caramel into one easy dessert.

HERE IS HOW TO MAKE CARAMEL APPLE CHEESECAKE TARTS:

WHERE CAN I FIND THESE INGREDIENTS?

All of the ingredients for these caramel apple cheesecake tarts can be found at your local grocery store.

Cream cheese, powdered sugar, and tart shells can usually be found in the refrigerated or frozen baking sections. Apples, cinnamon, vanilla extract and brown sugar are easy pantry and produce staples, while caramel sauce can be found near the ice cream toppings or baking ingredients.

For the tart shells, you can use either store-bought frozen tart shells or homemade shells if you prefer. I have yet to find a foolproof and easy pie tart recipe so for now, I will continue to make my life easier and do store-bought!

WHAT ARE THE INGREDIENTS?

These tarts are insanely easy to make! Here is what you’ll need:

Cheesecake Filling

  • 1 block cream cheese
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Sweet Apple Filling

  • 1 large apple, diced
  • 3 tbsp brown sugar
  • ½ tsp cinnamon

For Assembly

  • 12 tart shells
  • Caramel sauce, for drizzling

These simple ingredients come together to create a creamy, fruity, and indulgent little dessert.

WHAT EQUIPMENT DO I NEED?

I did everything by hand basically but of course, if you have the kitchen tools, it’s much easier to use them than to do everything by hand! Honestly, I only really use kitchen tools if I’m hosting! Here is some of the things you may need:

  • Mixing bowl
  • Electric hand mixer or stand mixer
  • Small saucepan or skillet
  • Spoon or spatula
  • Knife and cutting board
  • Measuring cups and spoons
  • Baking sheet
  • Piping bag or spoon (optional)

A piping bag makes it easier to neatly fill the tart shells with the cheesecake mixture, but a spoon works perfectly fine too.

CAN I SUBSTITUTE/ADD ANYTHING OUT?

Absolutely! These tarts are easy to customize depending on what you have available.

For the apples, you can use your favourite variety. Honeycrisp, Gala, Granny Smith, and Fuji all work well. Granny Smith apples will give you a slightly more tart contrast to the sweet cheesecake and caramel. I love Ambrosia apples! We always have 1-3 bags of Ambrosia apples in our house, so that’s what I use! They are perfect and crunchy and delicious!

You can also substitute the caramel sauce with salted caramel for an extra sweet-and-salty flavour, or honestly any syrup you want, like butterscotch.

Want to add even more toppings? Try:

  • Chopped pecans or walnuts
  • Whipped cream
  • Extra cinnamon
  • A sprinkle of sea salt
  • Crushed graham crackers
  • White chocolate drizzle
  • Crumble topping

You could also add a little lemon juice to the apple mixture to help brighten the flavour.

WHAT DOES CARAMEL APPLE CHEESECAKE TARTS TASTE LIKE?

These little tarts taste like a combination of creamy cheesecake, warm apple pie, and caramel sauce all in one bite! 🍎✨

The cheesecake filling is smooth, creamy, and lightly sweet with a hint of vanilla. The diced apples become soft and tender when cooked with brown sugar and cinnamon, giving them a warm, caramelized apple-pie flavour.

The buttery tart shell adds a delicate crunch, while the caramel drizzle brings everything together with a rich, buttery sweetness.

They’re creamy, fruity, buttery, warm, and indulgent, with the perfect balance of cinnamon-spiced apples and sweet caramel. It’s literally autumn in a tart!

HOW LONG DOES IT KEEP FOR?

Because these tarts contain a cream cheese filling, they should be stored in the refrigerator.

  • In the fridge: About 3–4 days in an airtight container.
  • At room temperature: Don’t leave them out for more than 2 hours.
  • Freezing: Not recommended once assembled, as the cheesecake filling and apples can change texture when thawed.

For the best texture, keep them refrigerated and add a fresh drizzle of caramel just before serving.

INSPIRATIONS FOR THIS RECIPE?

These tarts were inspired by some of my favourite fall desserts: apple pie, cheesecake, and caramel apples.

I wanted to combine those classic flavours into a smaller, easy-to-serve dessert. Instead of making a whole cheesecake or apple pie, these little tart shells give you individual portions that are perfect for entertaining. They are so easy to eat, so even if you don’t have a big party or gathering going on, you can make this and store it in the fridge for an after-dinner dessert during the fall months!

They’re especially cute for Thanksgiving, fall parties, Friendsgiving, Halloween, or cozy weekend baking.

I also love how the combination of the creamy cheesecake filling with warm cinnamon apples makes these feel extra special without requiring a complicated dessert recipe.

ANY OTHER NOTES?

  • Make sure your cream cheese is really soft before mixing so your cheesecake filling comes out smooth and creamy.
  • Let the cooked apple mixture cool slightly before assembling the tarts as you’re piping it onto cream cheese.
  • If using frozen tart shells, bake them according to the package directions and allow them to cool before filling. Add the caramel drizzle right before serving for the prettiest presentation.
  • For an extra fall-inspired finish, sprinkle a little cinnamon or chopped pecans over the caramel.
  • You can prepare the cheesecake filling and apple mixture ahead of time and assemble the tarts closer to serving if needed!

Instructions

  • Once the tart shells have cooled, spoon or pipe the cheesecake filling evenly into each shell.
  • Spoon the warm cinnamon apples over the cheesecake filling.
  • Finish each tart with a generous drizzle of caramel sauce.
  • Serve immediately or refrigerate until ready to enjoy!
