I totally get it. Making dinner after a long day can be such a drag! You’ve had a long day at work + a long commute and all you want to do is relax once your home.

I used to feel the same way which enabled me to spend so much money on getting take out on food that didn’t serve my temple of a body!

This recipe is so versatile, delicious and easy. You can even prep it the night before so as soon as you get home, you flop this on a sheet, bake and eat with enough time to clean up and wind down before bed.

My favourite thing about sheet pan dinners are the lack of mess! If I’m being completely honest, there are a handful of times where I will literally eat off the sheet pan and save a plate haha.

For me, time is so valuable so the more efficient I can be at some portions of my day, the more I get to have fun! When I have these quick sheet pan dinners, I have time for a long bubble bath, re-paint my nails, read an extra chapter or sleep earlier!

HERE IS HOW TO MAKE Healthy Sheet Pan Shrimp Dinner:

WHERE CAN I FIND THESE INGREDIENTS?

In this recipe, I used bell peppers, broccoli florets and mushrooms as my veggies. Shrimp as my protein. All available at your local grocery shops or farmer’s markets.

WHAT ARE THE INGREDIENTS?

Literally any veggies that you can roast! I had broccoli, yellow bell pepper and mushrooms. I also love having zucchini, sweet potatoes, red onions brussel sprouts and squash too! In this recipe, I used shrimp as it is the fastest to cook! I like using shrimp as it’s not to heavy as having meat. Aside from that, olive oil and your fav spices.

CAN I SUB ANYTHING OUT?

You sure can! Make this vegetarian/vegan and omit the shrimp. You could add some chickpeas for some protein or use a beyond meat substitute! I love using Gardein for all my meat alternatives. If you’re looking for a more decadent taste, butter is your friend in this one. I like adding some melted butter sometimes because life is better with butter!

WHAT DOES IT TASTE LIKE?

This dish is super simple and honestly quite plain but that’s okay. It’s always nice to balance out decadent meals and light healthier meals. It literally just tastes like roasted veggies and shrimp! Nothing special but none the less, mouthwatering! Sometimes, I do these and add them on top of some a crisp green salad or have it with some fresh white rice or make an easy chow mein.

Healthy Sheet Pan Shrimp Dinner

This recipe is a super easy weeknight dinner recipe. Takes about 10-15 minutes to bake and is mess-free!

Equipment

  • Oven

Ingredients

  • 1 Lbs Raw Shrimp
  • 2 Cups Broccoli Florets
  • 2 Cups Mushrooms
  • 1 Cup Bell Pepper
  • 3 Tbsp Olive Oil
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1 Tbsp Paprika
  • 1 Tbsp Old Bay
  • 1 Tbsp Salt
  • 1 Tbsp Pepper
  • 2 Tbsp Fresh Lemon

Instructions

  • Pre-heat oven to 400 F
  • Add all your seasonings, oil, and lemon juice into a bowl and set aside
  • Spread out all your ingredients on your sheet pan and pour over the seasonings mix
  • Mix everything and ensure that it is coated in the mixture and bake in oven for 15-20 mins

I get those times where thinking about what to make for dinner is just not enjoyable but I also do believe in balance. My husband and I enjoy food and we use to try different cuisines for date nights a few times a week prior to the pandemic.

Now, as we’re a little more conscious financially and health wise, we grab take out once a week and make our own meals the rest of the days. We make our coffee’s at home as well as have 3 meals and snacks at home too!
