HERE IS HOW TO MAKE ORANGE CRANBERRY SHORTBREAD COOKIES WITH EGGNOG ICING:

WHERE CAN I FIND THESE INGREDIENTS?

To prepare Orange Cranberry Shortbread Cookies With Eggnog Icing, you can find the ingredients at various locations:

  1. Grocery Stores: Common ingredients like flour, sugar, butter, dried cranberries, oranges, and powdered sugar are readily available in the baking and produce sections of most grocery stores.
  2. Specialty Food Stores: Specialty stores might offer unique varieties, high-quality kinds of butter, or specialty flours that can elevate your cookies.
  3. Farmers’ Markets: Dried cranberries, oranges, and even local dairy products might be available at farmers’ markets, ensuring the freshest ingredients for your cookies.
  4. Online Retailers: If specific or rare ingredients are required, online platforms often provide a wide selection of baking supplies and fresh produce, delivering them directly to your doorstep.
  5. Local Bakeries or Pastry Shops: Sometimes, local bakeries or pastry shops may sell items like freshly grated orange zest or specialty flours, allowing you to access premium-quality ingredients.

By exploring these options, you’ll have no trouble sourcing the necessary ingredients to create these delightful Orange Cranberry Shortbread Cookies with Eggnog Icing, adding a festive touch to your holiday baking.

WHAT ARE THE INGREDIENTS?

The ingredients to make these delicious Orange Cranberry Shortbread Cookies With Eggnog Icing are:

  • Flour
  • Butter
  • Icing Sugar
  • Dried Cranberries
  • Oranges
  • Eggnog

WHAT EQUIPMENT DO I NEED?

You don’t need a lot of equipment to make these delicious Cranberry Orange Shortbread cookies but you will need a few items like a grater for the orange zest, a baking dish, and an electric mixer. Other than that, you’ll need some bowls, measuring cups and some spoons and spatulas which you should already have at home, if not, you can always purchase some on Amazon or even your local dollar store if you’re on a budget!

Here are some of my favorite kitchen picks from Amazon:

CAN I SUBSTITUTE/ADD ANYTHING OUT?

You can of course substitute or add anything to this recipe! I love seeing everyone’s creativity come out when cooking or baking so I always encourage it!

Some great additions to this recipe would be to add in some nuts like chopped pistachios, almonds, walnuts, and pecans for EXTRA crunch. You can also add in more sweetness as these cookies are fairly mild in sweetness! Some sweet ingredient additions are either dark/milk/white chocolate chips or a combination of the chocolates.

If you want something spiced, you can add in some nutmeg, cloves, cinnamon, ginger, star anise, cardamom, or any other Christmas spices! The sky is the limit with combinations for these cookies!

WHAT DO ORANGE CRANBERRY SHORTBREAD COOKIES WITH EGGNOG ICING TASTE LIKE?

Orange Cranberry Shortbread Cookies With Eggnog Icing offer a delightful blend of flavors:

  1. Orange Zest: The cookies have a subtle yet vibrant citrusy undertone from the orange zest. It adds a refreshing brightness that complements the richness of the buttery shortbread.
  2. Cranberries: The cranberries infuse a tangy sweetness, balancing the cookie’s buttery richness with bursts of tartness in every bite.
  3. Shortbread Texture: The shortbread base is crumbly and tender, boasting a rich, buttery flavor that melts in your mouth.
  4. Eggnog Icing: The icing brings creamy sweetness and a hint of warm spices reminiscent of eggnog, enhancing the overall festive appeal. It complements the tangy-sweet profile of the cookies, adding a velvety and flavorful finish.

These cookies encapsulate the essence of the holiday season, offering a harmonious blend of citrusy freshness, tart cranberry zing, buttery richness, and creamy eggnog flavors. Each element harmonizes beautifully to create a delightful treat that’s perfect for festive celebrations.

HOW LONG DOES IT KEEP FOR?

Orange Cranberry Shortbread Cookies With Eggnog Icing can be stored for several days in proper conditions:

  1. Room Temperature: Stored in an airtight container at room temperature, the cookies stay fresh for about 3-5 days. Ensure they’re kept away from direct sunlight or heat sources to maintain their texture and taste.
  2. Refrigeration: If you prefer a longer shelf life, refrigerate the cookies in an airtight container. They can last up to a week in the refrigerator, preserving their freshness and flavor.
  3. Freezing: For longer storage, the cookies can be frozen. Place them in an airtight container or freezer bag, separating layers with parchment paper to prevent sticking. They’ll maintain quality for up to 2-3 months. Thaw them at room temperature before serving.

Ensure the Eggnog Icing is completely set and the cookies are cool before storing to prevent any moisture buildup. Always check for changes in texture or taste before serving stored cookies, and reheat or refresh them in the oven for a few minutes if needed.

INSPIRATIONS FOR THIS RECIPE?

Shortbread is my favorite cookie! I am always buying boxes of shortbread cookies during the holidays and wanted to recreate my own this year. I love enjoying shortbread cookies with my afternoon coffee pick-me-ups.

I knew I wanted to make something with cranberries this year and thought of making just plain cranberry shortbread cookies but then I thought orange would just be the perfect addition since I make my cranberry sauce with orange zest as well!

The eggnog icing was a last-minute decision but the best one! I decided to mix some icing sugar and eggnog and the flavours ended up going together so well. I’m extremely happy with it! I used the same recipe for shortbread as my Salted Caramel Bars and just baked these a little longer so they would be firm cookies.

ANY OTHER NOTES?

No other notes for this one! Just beware that they are so additive and yummy!

Ingredients

Orange Cranberry Shortbread Cookies

  • 1 1/2 Cups Salted Butter room temp/softened
  • 1 Cup Icing Sugar
  • 3 Cups All-Purpose Flour
  • 1/2 Cup Dried Cranberries halves
  • 1/4 Cup Orange Zest

Eggnog Icing

  • 1/4 Cup Icing Sugar
  • 1 Tbsp Eggnog

Instructions

Orange Cranberry Shortbread Cookies

  • Preheat oven to 325F and line a baking sheet with parchment paper or grease generously with butter or oil.
  • In a large mixing bowl, cream your butter with an electric mixer, for 1-3 minutes.
  • Next, add in your icing sugar 1/2 cup at a time, and mix again. Make sure to scrape down the sides so everything is well incorporated.
  • Now add in your flour 1 cup at a time and mix at low speed. At this point, you'll end up with really crumbly dough.
  • Lastly, add in your dried cranberries and orange zest and mix one last time.
  • Dump all the dough into your baking sheet and press down firmly including all corners of the pan. If your cookies are on the thicker side, you may want to poke the cookies with a fork for even baking. If the cookies are regular/thin size, leave them as is.
  • Bake in the oven for about 20-25 minutes or until the edges are slightly golden. Remove from oven and let cool.

Eggnog Icing

  • In a small bowl, whisk together your icing sugar and eggnog until it's at a consistency you want. If you're wanting a more thicker icing, add less eggnog. If you're wanting a thinner consistency, then add more eggnog.
  • Once fully whisked and your cookies have cooled, drizzle your icing on top.
  • Serve and enjoy!
