The ingredients for this can be found anywhere! This salad is so easy to make that all the ingredients are pretty much available in all big chain grocery stores. You’ll of course, need some fresh crunchy veggies from the produce section. Some chicken breast either already cooked or you can cook it yourself. Some feta from the dairy section and the dressing for this is literally just salt, pepper, balsamic vinegar and olive oil! That’s all you really need for this and it is so yummy.
WHAT ARE THE INGREDIENTS?
The ingredients to make this yummy refreshing salad are:
- Quinoa
- Chicken Breast
- Cucumbers
- Tomatoes
- Feta
- Olive Oil
- Balsamic Vinegar
- Salt
- Pepper
WHAT EQUIPMENT DO I NEED?
Whenever I make this, I get a huge mixing bowl and throw everything together and honestly just eyeball the ingredients and taste as I go! I did measure out all the ingredients for the sake of this recipe as a base, but to be honest, some days, your taste buds are just different, so don’t be afraid to alter it to your taste buds!
This salad is perfect for make-ahead/meal prep lunches, so you can divide this into several containers depending on your portions!

Oh, you sure can! I try my best to keep my recipes and meals as simple as possible. If I see a complicated recipe, I’m not going to lie, I run for the hills. Sometimes I love to cook/bake more intricate recipes, but honestly, most weeks I’m pretty busy and have things on my to-do list to do so I love just making sure I have healthy meals ready for me.

I often go through these phases where I am on point with my meal prep and nutrients, then it slowly goes out the window, and I’ve realized I’ve had toasted bread with salted butter for dinner for 3 days straight, and I’m like oh no… I gotta get more nutrients in me 😂
When that happens, I like to meal prep super easy things to ensure that I’m getting a balance of nutrients while not slaving away in the kitchen for a day! This salad is so easy to make and hits all the marks for me!

Mediterranean Chicken Quinoa Salad
Ingredients
- 2 1/2 Cups Cooked Quinoa
- 2 1/2 Cups Cooked Chicken Breast
- 2 Cucumbers diced
- 3 Tomatoes diced
- 1 1/2 Cups Feta crumbled
- 1/4 Cup Olive Oil
- 1/2 Cup Balsamic Vinegar
- 1 tsp Black Pepper
- Salt to taste
Instructions
- In a large bowl, combine the cooked quinoa and cooked chicken breast.
- Add the diced cucumbers, tomatoes, and crumbled feta.
- In a small bowl, whisk together olive oil, balsamic vinegar, black pepper, and salt.
- Pour the dressing over the salad and toss until everything is well coated.
- Taste and adjust seasoning if needed.
- Serve immediately or chill in the fridge for 2 hours for best flavor.
