I’m not going to lie to you… I’ve made this salad 3 weeks in a row! It is so tangy and savoury, I literally look forward to eating it every day, and I wanted to share the recipe with you all!

HERE IS HOW TO MAKE MEDITERRANEAN CHICKEN QUINOA SALAD:

WHERE CAN I FIND THESE INGREDIENTS?

The ingredients for this can be found anywhere! This salad is so easy to make that all the ingredients are pretty much available in all big chain grocery stores. You’ll of course, need some fresh crunchy veggies from the produce section. Some chicken breast either already cooked or you can cook it yourself. Some feta from the dairy section and the dressing for this is literally just salt, pepper, balsamic vinegar and olive oil! That’s all you really need for this and it is so yummy.

WHAT ARE THE INGREDIENTS?

The ingredients to make this yummy refreshing salad are:

  • Quinoa
  • Chicken Breast
  • Cucumbers
  • Tomatoes
  • Feta
  • Olive Oil
  • Balsamic Vinegar
  • Salt
  • Pepper

WHAT EQUIPMENT DO I NEED?

Whenever I make this, I get a huge mixing bowl and throw everything together and honestly just eyeball the ingredients and taste as I go! I did measure out all the ingredients for the sake of this recipe as a base, but to be honest, some days, your taste buds are just different, so don’t be afraid to alter it to your taste buds!

This salad is perfect for make-ahead/meal prep lunches, so you can divide this into several containers depending on your portions!

CAN I SUBSTITUTE/ADD ANYTHING OUT?

Oh, you sure can! I try my best to keep my recipes and meals as simple as possible. If I see a complicated recipe, I’m not going to lie, I run for the hills. Sometimes I love to cook/bake more intricate recipes, but honestly, most weeks I’m pretty busy and have things on my to-do list to do so I love just making sure I have healthy meals ready for me.

Here are some ideas to change up this recipe!

  • Add some red onions for a kick
  • Add some legumes for some added fibre, like chickpeas
  • Before eating, add a crunch like tortilla chips or wonton crisps
  • Add olives for a salty kick
  • Add some nuts before eating for more healthy fats

The chicken is juicy and savory, while the quinoa adds a light, nutty base. Crisp veggies bring crunch and freshness, and everything is tied together with a balsamic vinegar dressing makes it the perfect salad. You get a balance of savory, tangy, and slightly earthy flavors that feel both refreshing and filling at the same time.

HOW LONG DOES IT KEEP FOR?

Mediterranean Chicken Quinoa Salad stores really well, making it perfect for meal prep:

  • In the fridge: 5-7 days in an airtight container. It honestly gets better the longer because the vinegar sits in!

INSPIRATIONS FOR THIS RECIPE?

I often go through these phases where I am on point with my meal prep and nutrients, then it slowly goes out the window, and I’ve realized I’ve had toasted bread with salted butter for dinner for 3 days straight, and I’m like oh no… I gotta get more nutrients in me 😂

When that happens, I like to meal prep super easy things to ensure that I’m getting a balance of nutrients while not slaving away in the kitchen for a day! This salad is so easy to make and hits all the marks for me!

ANY OTHER NOTES?

I swear guys this salad is so good, I literally couldnt stop eating it the day that I made it HAHA I had to step away from it or I’d eat my week of meal prep in one sitting haha

Ingredients
  

  • 2 1/2 Cups Cooked Quinoa
  • 2 1/2 Cups Cooked Chicken Breast
  • 2 Cucumbers diced
  • 3 Tomatoes diced
  • 1 1/2 Cups Feta crumbled
  • 1/4 Cup Olive Oil
  • 1/2 Cup Balsamic Vinegar
  • 1 tsp Black Pepper
  • Salt to taste

Instructions
 

  • In a large bowl, combine the cooked quinoa and cooked chicken breast.
  • Add the diced cucumbers, tomatoes, and crumbled feta.
  • In a small bowl, whisk together olive oil, balsamic vinegar, black pepper, and salt.
  • Pour the dressing over the salad and toss until everything is well coated.
  • Taste and adjust seasoning if needed.
  • Serve immediately or chill in the fridge for 2 hours for best flavor.

INGREDIENTS
3 Cups Cooked Pasta
1 Cup Dill Pickles diced
1 Cup Cheddar Cheese diced
1 Cup Crispy Bacon crumbled
1 Tbsp Fresh Dill
1/2 Cup Sour Cream
1/4 Cup Pickle Juice
1 Packet Ranch Dressing Seasoning Packet
2 Tbsp Mayo

INSTRUCTIONS
1. In a large bowl, whisk together the sour cream, pickle juice, ranch seasoning packet, and mayonnaise until smooth.
2. Next, combine the cooked pasta, chopped pickles, cheddar cheese, crispy bacon, and fresh dill.
3. Toss the pasta mixture with sauce and toss until everything is evenly coated.
4. Cover and refrigerate for at least 4 hours to allow the flavors to come together. (Though, you can eat it immediately if you’d like!)
5. Give the salad a final stir before serving and garnish with extra dill or chopped pickles if desired.

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar
* 2 Eggs
* 1 tsp Vanilla Extract
* 1 Tbsp Almond Extract 
* 3/4 Cup Sour Cream
* 1/4 Cup Milk
* 2 Tbsp Poppy Seeds
* 1/4 Cup Slivered Almonds sprinkle on top

INSTRUCTIONS
* Preheat oven to 350°F and line a 12-cup muffin tin with liners or lightly grease it.
* In a large bowl, whisk together oil, sugar, eggs, vanilla extract, almond extract, sour cream, and milk until smooth.
* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.
* Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
* Let cool slightly before serving.
