WHAT ARE THE INGREDIENTS?

The ingredients to make these delicious mushroom kale egg bites are:

  • Eggs
  • Mushrooms
  • Kale (either frozen or fresh is fine)
  • Cheese (your preference, I just use a shredded cheddar mix)
  • Milk (any unsweetened milk is fine, I just use 2% dairy milk)
  • Salt (to taste)
  • Pepper (to taste)

WHAT EQUIPMENT DO I NEED?

This recipe is one of the easiest ways to meal prep! I love making these for the week so I don’t need to worry about breakfasts/snacks and end up eating something unhealthy and not nourishing. All you really need for this recipe are a whisk, cutting board, knife, bowls and either a muffin tin greased well or silicone molds! I always use silicone molds as the egg bites pop out super easily and they are resuable!

Here are some of my favorite things to use from Amazon:

CAN I SUBSTITUTE/ADD ANYTHING OUT?

You sure can! I keep mine super simple as in the mornings, I don’t necessarily have the greatest appetite. I only use salt and pepper to season and occasionally just dip them in a little bit of ketchup or hot sauce before I eat them. You can add whatever seasonings you’d like to this!

On the same note of keeping things super simple, the stars of this dish are just kale and mushrooms but if you’d like to add some other veggies, please do! Bell peppers, tomatoes, spinach, corn, garlic, and/or onions would be fantastic in this!

I generally buy shredded cheese in bulk from Costco and it’s usually just the cheddar mix but you can use other cheeses in this like swiss, Monterrey jack cheese, cottage cheese, etc!

Lastly, I know that Starbucks does egg bites too but to be honest, I’ve never tried Starbucks egg bites so I wouldn’t be able to compare them and say this is a copycat Starbucks version. All I know is that these are delicious and earthy and I love them!

WHAT DO MUSHROOM KALE EGG BITES TASTE LIKE?

HOW LONG DOES IT KEEP FOR?

Mushroom Kale Egg Bites can be stored in the refrigerator for about 3-4 days in an airtight container. For the best taste and texture, it’s recommended to consume them within the first 2-3 days after preparation. I generally will have 2 per serving and if I’m hungry before a workout on some days, I just eat one of these!

INSPIRATIONS FOR THIS RECIPE?

No specific inspirations! I love making easy and attainable recipes. I find that when I’m scrolling social media, I get overwhelmed by some of the complex recipes. I’m a firm believer in healthy being simple and society just overcomplicates everything haha!

This year, I’m been conscious of instead of doing a fad diet, just continuing to nourish my body with what it needs! I don’t restrict anything and just keep in mind of nutrients in my food!

ANY OTHER NOTES?

Yes! Quick note for this one, when you bake them in the oven, you will see them rise, do not panic! They will rise and then fall once you take them out of the oven to cool!

Mushroom Kale Egg Bites

Mushroom Kale Egg Bites: A savory symphony of earthy mushrooms, nutrient-packed kale, and velvety eggs—a wholesome morning melody in every bite.

Ingredients
  

  • 8 Eggs
  • 1 Cup Kale either frozen or fresh, shredded
  • 8 White Mushrooms diced
  • 1/2 Cup Shredded Cheese or as much as your heart desires
  • 1/3 Cup Milk 2% dairy, or any unsweetened dairy substitute
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat your oven to 375F and either grease a muffin tin or use silicone muffin liners.
  • In a large bowl, crack in 8 eggs then whisk together.
  • Once eggs are fully whisked, add in your milk, kale, mushrooms, cheese, salt and pepper. Give it one more whisk until everything is fully mixed up.
  • Get your muffin tin and use a ladle to pour the mixture evenly throughout.
  • Bake in the oven for 25-35 minutes or until the tops of the egg bites are golden brown.
  • Let cool, serve, and enjoy!

INGREDIENTS
* 100 g Lean Ground Beef cooked however you’d like
* 120 g Black Beans cooked however you’d like 
* 150 g Raw Coleslaw Mix 
* 1-2 tbsp Buffalo Sauce

INSTRUCTIONS
* In a small bowl, heat up your ground beef and black beans for 45 seconds in the microwave.
* In a large bowl, add in your raw coleslaw mix then top your ground beef and black beans on top.
* Drizzle the bowl with your buffalo sauce, eat and enjoy!

3 Ingredient Crunchy Furikake Chickpeas! High Fibe 3 Ingredient Crunchy Furikake Chickpeas! High Fiber High Protein Snack!! 🍙

INGREDIENTS
* 1/4 Cup Chickpeas (dehydrated then rehydrated for 24 hours or canned)
* 1-3 Tbsp Furikake Seasoning put as much as you’d like! I put extra on mine <3
* 1 Tbsp Avocado Oil or any oil you prefer!

INSTRUCTIONS
* In a bowl, add in your chickpeas and oil. Mix well together so that every chickpea is coated in oil.
* Add your chickpeas in a single layer in your air fryer. Air fry at 400F for about 10-15 minutes depending on your preferred level of crunch!
* Pour chickpeas into a bowl and add in your furikake seasoning to toss in.
* Serve and enjoy!
