I’m probably sounding like a broken record at this point but I’m so excited for Fall! I’m wrapping up summer mid-July and pushing out autumn content and this is one of the few recipes for summer that I have left!

Watermelon and arugula?! You’re probably thinking that this is a weird combo and I hear ya! It does seem like a weird combo but for some weird reason, it complements each other so well.

Watermelon is a juicy, sweet light fruit while arugula also known as rocket is a plant that has a spicy peppery kick to it!

The first time I tried watermelon arugula salad was when I went to one of my friend’s houses as a young girl and ended up having dinner there.

As an Asian-Canadian, it was the first time I’ve heard of watermelon in a salad and I was shocked, to say the least! I remember my sweet friend’s mom reassuring me to try it out and being confident that I would enjoy it.

It’s been so long now that I can’t remember what she put in it but I remember it being so good that even though there was pizza on the table, all I wanted was the watermelon salad!

Now you can trust me when I say that watermelon salad is just so delicious because an 11-year-old ate more of it than the cheesy pizza on the table.

Are you a salad or pizza person? I’m 100% a salad person!

HERE IS HOW TO MAKE Watermelon Arugula Salad:

WHERE CAN I FIND THESE INGREDIENTS?

Watermelon Arugula Salad is yet another recipe that you can find all the ingredients in the grocery store! Watermelon is in season in the summer so its perfect to pick up on your next trip. I can’t stress this enough but if you have a local farmers market near you, the locally grown products are always the best for fresh summer salads!

WHAT ARE THE INGREDIENTS?

The ingredients for this Watermelon Arugula Salad is:

  • Watermelon
  • Arugula (Rocket)
  • Cucumber
  • Feta Cheese
  • Olive Oil
  • Lemon Juice
  • Ground Pepper
  • Honey (optional)
  • Almonds (garnish)

WHAT EQUIPMENT DO I NEED?

All you need for this Watermelon Arugula Salad is a bowl! Seriously, this is the best fresh summer recipe that you don’t need very much to make it happen. A standard salad bowl and utensils to mix everything together will work just fine! You’ll of course need a cutting board to chop the fruit and veggies and a whisk if you have it to make sure that the lemon juice and oil are well combined.

CAN I SUB ANYTHING OUT?

You sure can! The star of this dish is the watermelon so I recommend keeping this for sure but if you don’t like the spiciness of arugula, spinach works just fine. Cucumber is optional but adds a great crunch and is a great vegetable to help keep you hydrated in the summer. You can use other crunchy vegetables like bell pepper but it will make this salad even sweeter!

To make this salad vegan, you can definitely use vegan feta cheese! I usually use the brand Violife products.

The olive oil, pepper, and lemon juice dressing is really plain and simple so I recommend keeping it and just adding extra seasonings and spices if you’d like.

The honey is optional as well and I usually just add it if my watermelon wasn’t the greatest pick! The almonds are also optional but add a nice crunchy texture to this salad. I would keep these or use pine nuts or even pumpkin or sunflower seeds.

WHAT DOES IT TASTE LIKE?

This Watermelon Arugula Salad tastes like summer. The sweetness from the watermelon, a peppery kick from the arugula and saltiness from the feta makes this salad the perfect combo of flavours! It’s super refreshing as watermelon and cucumber are mostly made up of water and a plus is that eating these in the summer keeps you hydrated! The olive oil and citrus from the lemon set it all together for a refreshing light dressing.

HOW LONG DOES IT KEEP FOR?

The only downside of this Watermelon Arugula Salad is that you can’t make it ahead of time to enjoy. Unfortunately because of how watery watermelon is, you’ll need to enjoy it as soon as you prepare it. Even after half an hour, a lot of the liquids come out and it ends up being soggy which isn’t the best way to enjoy this salad!

Make this at the time you want to enjoy it or the last thing you prepare before having lunch/dinner!

WHAT GOES WITH THIS Watermelon Arugula Salad?

Honestly, it’s already an interesting combo as it is so I wouldn’t say anything really “goes with it” BUT it’s a great side for anything!

  • Picnics
  • Pasta
  • Pizza
  • Grilled Meats and Veggies
  • Sandwiches
  • Burgers
  • By itself!

ANY OTHER NOTES?

I cannot stress this enough but this salad DOES NOT keep well! Make sure that you make it right before you eat it so that it doesn’t end up being soggy.

Watermelon Arugula Salad

Watermelon Arugula Salad is the best refreshing side salad for summer! Sweetness from the watermelon, a peppery kick from the arugula and saltiness from the feta makes this salad the perfect combo of flavours!

Ingredients
  

  • 1 1/2 Cups Watermelon cubed
  • 2 Cups Arugula (Rocket)
  • 1/4 Cup Cucumber sliced
  • 1/3 Cup Feta Cheese crumbled
  • 1 Tbsp Olive Oil
  • 1/4 Cup Lemon Juice
  • 1/8 Tsp Ground Pepper
  • 1 Tsp Honey optional
  • Sliced Almonds to garnish

Instructions
 

  • In a large bowl, combine your olive oil, lemon juice, pepper, honey (optional), and whisk.
  • Next add in your watermelon and cucumber and mix. Make sure to coat the pieces entirely with the olive oil mixture.
  • Once the watermelon and cucumber is fully coated, add in your arugula and feta cheese.
  • Plate and sprinkle extra feta and slice almonds on top.
  • Serve and enjoy!

Have you ever tried Costco’s almond poppy seed muffins? If you have, this is a copycat version of it! It’s my fav muffin and I knew I had to recreate it at home!

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar
* 2 Eggs
* 1 tsp Vanilla Extract
* 1 Tbsp Almond Extract 
* 3/4 Cup Sour Cream
* 1/4 Cup Milk
* 2 Tbsp Poppy Seeds
* 1/4 Cup Slivered Almonds sprinkle on top

INSTRUCTIONS
* Preheat oven to 350°F and line a 12-cup muffin tin with liners or lightly grease it.
* In a large bowl, whisk together oil, sugar, eggs, vanilla extract, almond extract, sour cream, and milk until smooth.
* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.
* Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
* Let cool slightly before serving.

* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!

INGREDIENTS
* 2 1/2 Cups Cooked Quinoa
* 2 1/2 Cups Cooked Chicken Breast 
* 2 Cucumbers diced
* 3 Tomatoes diced
* 1 1/2 Cups Feta crumbled
* 1/4 Cup Olive Oil
* 1/2 Cup Balsamic Vinegar
* 1 tsp Black Pepper
* Salt to taste

INSTRUCTIONS
* In a large bowl, combine the cooked quinoa and cooked chicken breast.
* Add the diced cucumbers, tomatoes, and crumbled feta.
* In a small bowl, whisk together olive oil, balsamic vinegar, black pepper, and salt.
* Pour the dressing over the salad and toss until everything is well coated.
* Taste and adjust seasoning if needed.
* Serve immediately or chill in the fridge for 2 hours for best flavor.
