Wow, it’s been so warm where I live! I couldn’t believe it when I stepped out in a dress the other day.

I’ve been on two family picnics already. One with my husband’s side and the other with my side. It’s been so long since we’ve all seen each other but it was nice that everyone brought their own blankets, food and everything and we were all spaced out.

I definitely miss hugging my nieces and nephews but seeing them was more than enough for me at this time!

One thing that bothers me but shouldn’t is when picnic food isn’t picnic food. (LOL) I know, very odd for this to be bothering me but I think it’s more culture than anything. I grew up embracing Filipino culture so families would often bring these really delicious dishes but they were so high maintenance to eat.

It would be full-out dishes with rice or noodles on the side and would require lots of plates, cutlery, napkins, serving spoons etc. I usually love bringing simple things and then enjoying swimming if there’s a lake, playing a game, soaking up the sun, reading a book and overall just enjoy the company and have Easy Picnic Food Ideas.

I now have persuaded my family (at least the immediate family) to pack simpler and just enjoy the scenery and company on a picnic! I enjoy preparing refreshing foods on our picnics and I’ve included some of my favourites!

Sushi

I’ve done a handful of sushi nights but I prefer to get take out! We brought sushi for my family picnic a few weeks ago and it’s just such an easy option! Alternatively, you could make Onigirazu which is like a sushi sandwich and is the best picnic food to enjoy and is a mess-free/utensil not needed food!

Hawaiian Mac Salad

I had a Hawaiian-themed dinner before we had a bunch of lockdown orders with my immediate family and this was by far the best and easiest I’ve ever had! I for sure will make this recipe again.

Sausage Rolls

My husband’s fav snack! Love buying pre-made ones and just popping them in the oven.

Spinach and Feta Puffs

This reminds me of a Spanakopita pie! I like that these are little puffs that you can just easily grab one to use.

Crab Cakes

I love crab cakes but they are pricey! I think this would be perfect for a seaside picnic!

I’m not that fond of pigs in a blanket but my cousins love it! I like that it’s easy to eat and would gladly take this to a picnic to share!

Definitely the hype on Tiktok last year and I honestly haven’t tried it yet but with cream cheese, I’d doubt there would be any issues!

Peach Berry Fruit Salad

Last but not least, my most favourite and easiest Chocolate Chip Cookie recipe! For someone who has just stepped into the world of baking, this is perfect! Every time I make these, they always end up great! Super easy to whip up for last-minute events.

    We’re all for picnics! Although I have to admit we’re very sporadic when it comes to what we pack. It’s usually a bit of a free for all with what’s left in the cupboards. Very little thought actually goes into it. Thank you for sharing this though! Definitely some good inspiration on here! I love the idea of the potato salad & having something a bit fresher!     Picnic’s are actually one of my all time favourite things! My Mum used to be the best at picnics, she’d start it the day before and there would be various salads, cooked meats, pasta, sandwiches, fancy crisps. They were the best

    I love having picnics & the weather has finally been nice here so I definitely want to have a picnic soon!
    There are so many great recipes so I’ll definitely bookmark this page & come back to it soon! Also when I had a tea party with my daughter I made cucumber, egg salad & peanut butter & jelly sandwhiches along with potato salad & she really liked it!

    Wow, what a list! Thanks for sharing. My family recently started the whole family picnic thing, and lucky we are all old and wise enough that it’s just salads and dips and then the BBQ sausages and what not. Of course, we couldn’t do this last year cuz COVID and the state of Ontario right now leads me to believe we won’t get to have our picnic this year either.

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded

* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar
* 2 Eggs
* 1 tsp Vanilla Extract
* 1 Tbsp Almond Extract 
* 3/4 Cup Sour Cream
* 1/4 Cup Milk
* 2 Tbsp Poppy Seeds
* 1/4 Cup Slivered Almonds sprinkle on top

INSTRUCTIONS
* Preheat oven to 350°F and line a 12-cup muffin tin with liners or lightly grease it.
* In a large bowl, whisk together oil, sugar, eggs, vanilla extract, almond extract, sour cream, and milk until smooth.
* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.

* In a bowl, add in your rice and heat it in the microwave for 1 minute. This is so it’s easier for the sugar and rice vinegar to soak in. Add in your rice vinegar and sugar and mix well.
* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
