Refreshing Spring Pasta Salad

I swear by this Spring Pasta Salad recipe and believe that everyone needs to make it!

I enjoy a variety of foods. We definitely do not discriminately any foods and do not YUCK anyone’s YUM!

I have no idea where I initially tried pasta salad but it was definitely in high school. I never had it prior because it was just simply not something my mom knew about! Pasta isn’t that big in the Philippines.

This recipe I’m sharing with you will make you want to dance! Seriously, I danced while eating this because there is noting like filling your gorgeous temple of a body with fresh and vibrant foods and I included a lot in this to make it so yummy and pretty! It’s also really light so you won’t feel sluggish or heavy after having this as a meal.

This is the perfect salad to bring to your upcoming picnics or even to have for lunch at home and it does last and keep it shape about 2-3 days as well as its well refrigerated.

HERE IS HOW TO MAKE Spring Pasta Salad:

WHERE CAN I FIND THESE INGREDIENTS?

If you can, get everything fresh from the farmer’s market! You definitely won’t regret it as everything you buy is 100% fresh and local. The Farmer’s Markets are limited in my area so I wasn’t able to pick these products up but I will for sure be making this numerous times in the summer too! Everything on here should be available at your local grocery store.

WHAT ARE THE INGREDIENTS?

For the salad itself:

  • Cooked and oiled pasta
  • Black Olives
  • Corn Niblets
  • Cherry Tomatoes
  • Cucumber
  • Red Onion
  • Bell Pepper
  • Parmesan

For the dressing

  • Olive oil
  • Balsamic Vinegar
  • Fresh Lemon Juice
  • Pepper
  • Salt

CAN I SUB ANYTHING OUT?

You sure can! This salad is so great because you can add or leave out anything you’d like! I do love the combination of veggies I’ve used in this though and highly recommend it. Every bite is perfect and you get the sweetness of a piece or corn or tomato but the tanginess of the lemon and balsamic vinegar! You can add in some broccoli, cauliflower, fresh basil, spring onions, chives, zucchini, chickpeas and any protein sources if you’d like!

You can really use any cheese you’d like. I’ve used Bocconcini in this and I didn’t really like it as I enjoy the saltiness of parmesan! You can also simply use shredded mozzarella or feta.

If you’d like to make this vegan, just sub out the parmesan for a vegan alternative!

WHAT DOES IT TASTE LIKE?

This version of a Spring Pasta Salad tastes super refreshing, nutritious and overall just makes you feel good. This has never made me feel heavy! If you want as well you can increase the veggie ratio and lower the pasta! The corn and tomato is the perfect balance and makes it incredible!

ANY OTHER NOTES?

The most important note for this to keep its shape is to purchase veggies that are still a bit hard to prevent early spoilage as well as mushy veggies. This salad as great crunch from the cucumbers, onions and peppers.

Ensure that the cooked pasta is thoroughly strained and oiled so it doesn’t stick together or make the salad watery.

Also ensure that you whisk up the dressing really well so that the oil and balsamic vinegar come together!

Spring Pasta Salad

This delicious and colorful Spring Pasta Salad will be the hit of the picnic! Each bite is the perfect balance of sweet and savory and has a crunch from all the fresh vegetables!

Ingredients
  

Salad

  • 2 Cups Cooked & Oiled Rotini
  • 1/4 Cup Black Olives
  • 1/4 Cup Bell Peppers
  • 1/4 Cup Cherry Tomatoes
  • 1/4 Cup Cucumbers
  • 1/4 Cup Corn Niblets
  • 1/4 Cup Red Onions
  • 1/2 Cup Parmesan

Dressing

  • 1/4 Cup Olive Oil
  • 1/8 Cup Balsamic Vinegar
  • 1/2 Squeezed Fresh Lemon
  • 1 Tbsp Black Pepper
  • 1 Tsp Salt

Instructions
 

  • In a large bowl, add in your cooked and oiled rotini pasta.
  • In a separate bowl, combine and whisk together olive oil, balsamic vinegar, lemon juice, black pepper and salt.
  • Add in the olives, peppers, cucumbers, tomatoes, corn, onions, parmesan to the bowl of pasta.
  • Pour over dressing and fold together. Try not to over mix so the veggies keep its shape.
  • Cover and store in the fridge for at least half an hour, then serve and enjoy!

Asian Sesame Vermicelli Salad 🥗 This Asian Sesam Asian Sesame Vermicelli Salad 🥗 

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS
* 2 1/4 Cups Flour
* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar
* 2 Eggs
* 1 tsp Vanilla Extract
* 1 Tbsp Almond Extract 
* 3/4 Cup Sour Cream
* 1/4 Cup Milk
* 2 Tbsp Poppy Seeds
* 1/4 Cup Slivered Almonds sprinkle on top

INSTRUCTIONS
* Preheat oven to 350°F and line a 12-cup muffin tin with liners or lightly grease it.
* In a large bowl, whisk together oil, sugar, eggs, vanilla extract, almond extract, sour cream, and milk until smooth.
* Add flour, salt, baking soda, and baking powder directly into the same bowl. Gently mix until just combined.
* Fold in the poppy seeds.
* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.

INGREDIENTS
* 1 Can Tuna drained
* 2 Tbsp Sriracha
* 1/4 Cup Mayo
* 1 Tbsp Sesame Oil
* 2 Tbsp Furikake
* 1 Cup White Rice cooked
* 1 tsp Sugar
* 1/2 Tbsp Rice Vinegar
* 1 Packet Seasoned Seaweed

INSTRUCTIONS
* Preheat your oven to 400F and prepare a 6-inch baking pan.
* In a bowl, add in your rice and heat it in the microwave for 1 minute. This is so it’s easier for the sugar and rice vinegar to soak in. Add in your rice vinegar and sugar and mix well.
* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
