My household has been on a potato kick lately! My husband and I have been focusing on whole foods and we have been eating every potato out there! Yellow, white, red, russet, sweet, if it’s in potato form, we’re eating it!

With that being said, with eating lots of potatoes every day, I’ve had to get creative with cooking them so we don’t get sick of them too fast. I love air fryer recipes so much because of how quick and easy they are and knew I had to put Air Fryer Greek Potatoes into my monthly rotation!

HERE IS HOW TO MAKE AIR FRYER GREEK POTATOES:

WHERE CAN I FIND THESE INGREDIENTS?

The ingredients to make these air fryer Greek potatoes are super easy! You’ll need some yellow potatoes, olive oil, Greek seasoning and fresh lemon! You should already have everything at home but if you need to purchase it, you can find all of these at your local grocery store. You can find pre-made Greek seasoningand olive oil in the pantry aisle and potatoes and lemon from the produce section.

WHAT ARE THE INGREDIENTS?

Here’s what you’ll need to make these crispy and fluffy air fryer potatoes!

  • Yellow Potatoes
  • Olive Oil
  • Greek Seasoning
  • Lemon

WHAT EQUIPMENT DO I NEED?

To make this recipe, you really don’t need too much! You’ll need a cutting board and knife to cut the potatoes into bite-sized pieces, then you’ll want a bowl so you can wash and toss the potatoes in and of course, an air fryer to cook them in!

CAN I SUBSTITUTE/ADD ANYTHING OUT?

This recipe only requires 4 ingredients – I KNOW RIGHT! We love recipes that are super simple but you can of course alter this recipe to make it your own! here are som suggestions that you can do to make this recipe even better!

  • Adding other seasonings like paprika or onion powder for more flavour and colour
  • Adding some fresh herbs on top like parsley or dill
  • Crumbling some fresh feta on top or adding some shredded cheese
  • Using baby potatoes to save on chopping!
  • Making a fresh yogurt dip on the side
  • Substituting the olive oil for the oil of your choosing

WHAT DO AIR FRYER GREEK POTATOES TASTE LIKE?

These Air Fryer Greek Potatoes are crispy, golden, and loaded with bold Mediterranean flavor. Tossed in olive oil, lemon juice, and herbs, they’re the perfect side dish for just about anything – from grilled chicken to veggie skewers or a fresh Greek salad. They are so addictive! I’m not going to lie, I love them with a fresh creamy yogurt dressing! It is truly gone within minutes!! I will eat them piping hot and burn my mouth haha

HOW LONG DOES IT KEEP FOR?

Honestly, I recommend making them fresh and enjoying them immediately! These do great for meal prep but note that they do lose their crunch and become soft. Still very delicious, but if you want them crunchy, I recommend making them fresh or try reheating in the air fryer at high heat to get a little bit of crunch. They are good in the fridge for 4 days, stored in an airtight container.

INSPIRATIONS FOR THIS RECIPE?

My husband and I like to meal prep on the weekdays, and potatoes are our chosen carb sources! We go through lots of potatoes every week, so I have to get creative with ways to flavour them up! I love Greek potatoes and wanted them to be a little crisp,y so I knew I had to make air fryer Greek potatoes!

This recipe is beloved in our household, and we now enjoy it in our monthly flavour rotation!

Air Fryer Greek Potatoes

These Air Fryer Greek Potatoes are crispy on the outside, fluffy on the inside, and bursting with Mediterranean flavor! Tossed with olive oil, lemon juice, and herbs, they make the perfect side dish for any meal. Quick, easy, and ready in under 25 minutes!

Ingredients
  

  • 300 g Yellow Potato cut in bite sized pieces, washed and drained
  • 3 Tbsp Olive Oil
  • 1 Tbsp Greek Seasoning
  • 1/2 Fresh Lemon Squeezed
  • salt if needed, to your preference!

Instructions
 

  • In a bowl, add in your yellow potato and 2 Tbsp of olive oil. Toss altogether to ensure that all potato pieces are coated in oil.
  • Cook in your air fryer for 20 minutes at 400F, tossing at 10 minutes.
  • Once potatoes are cooked and crispy, add them back in a bowl, add the last Tbsp of olive oil, Greek seasoning and freshly squeezed lemon juice and toss!
  • Serve and enjoy!

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.
* In a small bowl, whisk together garlic, sesame oil, sesame seeds, soy sauce, brown sugar, and rice vinegar until well combined.
* Pour the sauce over the salad and toss until evenly coated.
* Chill in the fridge before serving for extra flavor for minimally 12 hours! Enjoy!

* Fold in the poppy seeds.

* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
