Blackberry Lemon Loaf 🍋 Blackberries just remind me of summer and my childhood! You’ll be scarfing down this delicious loaf the same day that you make it 🤤 INGREDIENTS * 1 1/2 Cup All Purpose Flour * 2 Large Eggs * 1/2 Cup Unsalted Butter melted * 1/4 tsp Salt * 1/4 tsp Baking Powder * 3/4 Cup White Sugar * 2/3 Cup 2% Milk * 1 Package Instant Jell-O Lemon Pudding Mix 99g * 1 Cup Blackberries some smashed, some whole! leave some a few to add to top of loaf before baking INSTRUCTIONS * Preheat your oven to 350F and prepare a greased (oil or butter) loaf pan. * In a large mixing bowl, add your sugar, eggs, and butter and mix well together. * Next, add in your milk, lemon pudding mix, baking powder, and salt and mix together again. * Lastly, slowly add in your flour and fold the batter then add in your smashed and whole blackberries to fold in one last time. Pour into your loaf pan and add a few remaining blackberries on top. * Once everything is mixed well and there are no clumps of flour, bake in the oven for 1 hour to 1 hour and 15 minutes minutes or until when you poke a toothpick in the middle of the loaf, it comes out clean! * Let cool, serve, and enjoy!

WHAT ARE THE INGREDIENTS?

The ingredients to make this delicious and moist blackberry lemon loaf are:

WHAT EQUIPMENT DO I NEED?

If you already bake at home, you don’t need much equipment for this recipe! Honestly, I just like to add things to a mixing bowl and just hand gold all the ingredients but you’re welcome to do what you’re comfortable with! For this loaf recipe, you’ll need a few bowls, measuring cups/spoons and a loaf pan.

CAN I SUBSTITUTE/ADD ANYTHING OUT?

Listen, I generally say yes to adding or substituting anything from any of my recipes however, I have to say that I’m not a confident enough baker to tell you what would be good to substitute and still leave you with a yummy loaf!

I will say though, if you do have dietary restrictions, there are tons of information online on what are good substitutions for ingredients!

You are welcome to add a few toppings if you’d like! Some delicious additions to either add on top or in the mixture would be some chocolate chips or nuts! If you want to do a little glaze as well, you can do some icing/powdered sugar and milk and just mix that together and pour it on top!

WHAT DOES BLACKBERRY LEMON LOAF TASTE LIKE?

Blackberry Lemon Loaf offers a delightful balance of tartness from the lemon flavour, complemented by the sweet and juicy burst of flavor from the blackberries. The loaf itself is moist and tender with a subtle lemony aroma. Each bite is a harmonious blend of citrusy brightness and fruity sweetness, making it a perfect treat for citrus and berry lovers alike.

The pudding mix keeps this loaf so moist and delicious! I truly love adding pudding mix to all my baking now!

HOW LONG DOES IT KEEP FOR?

Blackberry Lemon Loaf typically lasts for 3-4 days when stored in an airtight container in the refrigerator. My husband doesn’t have a huge sweet tooth so sometimes when I bake, it just ends up being me that eats it. I like to store the rest in the freezer then when I want to enjoy one, just pop it in the fridge to thaw a little bit and either eat it chilled or warm it up in the microwave for a few seconds.

INSPIRATIONS FOR THIS RECIPE?

Blackberries are starting to be in season again and when I saw a huge container at Costco looking so juicy and sweet, I knew I wanted to eat some AND bake with it. I really love lemon desserts and my lemon pudding bread recipe and thought it would be a fantastic flavour combination!

I truly enjoyed this loaf so much! Lemon and blackberries go so well together! I think I’ll have to try and make a blackberry lemonade as well for the summer!

ANY OTHER NOTES?

Yes! For more blackberry flavour throughout the whole loaf, it would be best to smash the blackberries up prior to adding them into the loaf mix. I do a mix of smash blackberries and just full size ones throughout the mix. Also, leave a few to place some on top! They do not fall down to the bottom of the loaf pan and looks beautiful when the loaf is sliced!

  • Preheat your oven to 350F and prepare a greased (oil or butter) loaf pan.
  • In a large mixing bowl, add your sugar, eggs, and butter and mix well together.
  • Next, add in your milk, lemon pudding mix, baking powder, and salt and mix together again.
  • Lastly, slowly add in your flour and fold the batter then add in your smashed and whole blackberries to fold in one last time. Pour into your loaf pan and add a few remaining blackberries on top.
  • Once everything is mixed well and there are no clumps of flour, bake in the oven for 1 hour to 1 hour and 15 minutes minutes or until when you poke a toothpick in the middle of the loaf, it comes out clean!
  • Let cool, serve, and enjoy!

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.
* In a small bowl, whisk together garlic, sesame oil, sesame seeds, soy sauce, brown sugar, and rice vinegar until well combined.
* Pour the sauce over the salad and toss until evenly coated.
* Chill in the fridge before serving for extra flavor for minimally 12 hours! Enjoy!

* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!

This Banana Bread Syrup is warm, sweet, and full of cozy flavor just like your favorite homemade loaf in liquid form! Perfect for coffee, pancakes, waffles, or desserts, it’s an easy homemade syrup that adds a comforting, bakery-style touch to any treat 💛

INGREDIENTS
* 1/2 Cup White Sugar
* 1/2 Cup Brown Sugar
* 1 Mashed Ripe Banana
* 1 tsp Vanilla Extract
* 1/2 tsp Cinnamon
* 1 Cup Water

INSTRUCTIONS
* In a small saucepan over medium heat, combine water, white sugar, and brown sugar.
* Stir until the sugars fully dissolve and the mixture begins to gently simmer.
* Add the mashed banana and cinnamon. Simmer for 5–8 minutes, stirring occasionally.
* Remove from heat and stir in the vanilla extract.
* Strain the syrup (optional for a smoother texture) and let cool.
