Who read the Crispy Garlic Shrimp Bites recipe I posted on Monday?! We are moving onto the main entrée which is so yummy! This is honestly an everyday meal but as you all know, I’m a super practical person and Valentine’s Day falls on a Sunday meaning a meal prep day!

What better than to use your Valentine’s Day leftovers for a few meals later in the week and skip a bunch of meal prepping? You’ll be able to spend more time enjoying Sunday night with your loved ones!

Now, I have no idea where I got this inspiration from. It sort of just popped into my head like a vision and I was set on it!

I wanted to make sure that this meal was inexpensive so that everyone could enjoy it and you wouldn’t have to go out of your way to grab any of these items! This will definitely be a dinner meal staple in your household and I loved this pasta so much! I even dropped some off to my parents to enjoy as I made a lot!

HERE’S HOW TO MAKE Creamy Cajun Chicken Fajita Pasta Bake:

Where can I find these ingredients?

All of these ingredients are available at your local grocery store. I know produce is always a tough one as certain parts of the world doesn’t have certain produce but I think bell peppers, onions and garlic are pretty standard? Correct me if I’m wrong!

What are the ingredients?

-3 Chicken Breasts

-1 Whole Bell Pepper

-Half a Sweet Onion

-2 Garlic Cloves

-Pasta Noodles – I used spagetti

-Cream

-Shredded Cheese

-Cajun Seasoning

-Chicken Bouillion

-Salt

-Pepper

-Lime

-Butter

-Olive Oil

Can I sub anything out?

Yes, you can absolutely sub some things out! Chicken can be subbed for any protein you’d like. This recipe would be excellent with steak or even some ground sausage. If you’re going vegetarian, add in more veggies, tofu or meat alternatives. I’d keep the peppers and onions in but you can definitely add some veggies like spinach or zucchini.

Again as I’m going to continue to preach, I am 100% respectful to everyone’s taste buds and know that everyone has different palettes. Substitute what you’d like! What’s important to this dish is the combination of creamy and Cajun seasoning. If you’re looking for a vegan option, blended cashews and nutritional yeast would be a great “cheesy” sub!

What does it taste like?

It tastes like so many good flavors in one tray. I am totally serious. If you’ve ever had a seafood boil, it smells like that mixed with a creamy white sauce.

Creamy Cajun Chicken Fajita Pasta Bake

This recipe is the best pasta bake to add to your weeknight meals! Easy and so yummy, you'll be looking forward to this every month.
Prep Time:10 minutes
Cook Time:40 minutes
Servings: 6 Meals

Equipment

  • Stove top
  • Oven

Ingredients

  • 3 Chicken Breasts cut into cubes
  • 1 Whole Bell Pepper sliced into long strips
  • 1/2 Sweet Onion sliced into long strips
  • 2 Cloves Garlic minced
  • 1 Pasta Of Choice portioned per person & cooked
  • 2 Cups Cream Of Choice
  • 1 Bag Shredded Cheese half in sauce and half on top
  • 1/2 Stick Salted Butter
  • 1 Tbsp Olive Oil
  • 1 Cajun Seasoning
  • 1 Chicken Bouillon
  • 1 Salt
  • 1 Pepper
  • 1/2 Lime for zest and juice

Instructions

  • Add half of the spices to your raw chicken breast cubes to marinate for a few minutes while you cook the veggies
  • On medium/high heat, place a saucepan on the stove and add your olive oil, garlic, onions and bell peppers to cook slightly
  • Once this has been tossed for a few minutes, remove from pan
  • Add a bit more olive oil and pan fry the marinated chicken breast
  • Remove the cooked chicken from pan and set to the side with the cooked veggies
  • In the same pan, add in the rest of your spices as well as half the juice of the lime
  • Set your pan to medium heat and add in your cream to heat up
  • Once cream and seasonings are well combine, add in half the bag of shredded cheese
  • Let sauce thicken up then add in the veggies and chicken back in
  • Set your oven to 375 F and grab your baking pan
  • In your pan mix in the pasta and sauce together until the pasta is well coated
  • Place the rest of the shredded cheese on top and add some lime zest on top
  • Bake in the oven for 10-15 mins on 375 F then Broil for 10 mins

Notes

  • Use any cream you’d like and if the sauce needs to be thicken, you could add some cornstarch or flour
  • Also, cilantro or parsley would be great to use as garnish 

I really enjoyed this recipe and my vision was definitely achieved. I would even love this a creamy sauce on top of pork chops or seafood and rice on the side!

  14. One thing I really hate is cheese and it’s in pretty much everything so thank you so much for the alternative ideas! I never know if cheese can be left out as it always seems to hold everything together, excited to try it with the cheese alternative though!

    1. Yes! You can totally omit the cheese and use nutritional yeast or if you don’t like that flavour at all, the cream & cajun taste without cheese is just as fab! You can also sprinkle panko on top and bake for a crunch xx

  16. Great recipe Lynn! I like comfort food. This is a meal I can certainly try, but by substituting dairy products (butter, cream, cheese) and replacing regular pasta with gluten-free pasta. If this recipe is adaptable for a vegetarian diet, it can also be adapted for a gluten-free or dairy-free diet. It has a certain versatility so that everyone can make it their way. Yunmy ?!
