In the summer, I love having simple recipes with fresh ingredients so naturally I had to experiment with lots of different guacamole and salsa recipes!

I love making shrimp ceviche as often as I can however there are days when I just want a quick fresh mid-day snack like guacamole!

This is obviously NOT an authentic recipe at all but if you like fresh, sweet and savoury recipes, this one is for you!

HERE IS HOW TO MAKE SWEET MANGO GUACAMOLE:

WHERE CAN I FIND THESE INGREDIENTS?

You can find the ingredients for this Sweet Chunky Mango Guacamole pretty much any grocery store that has fresh/frozen produce. I usually buy frozen Philippine mangos and get everything else in the produce section. Aside from the fresh produce, you’ll just need salt, pepper and olive oil. I also add hot sauce but 100% optional!

WHAT ARE THE INGREDIENTS?

The ingredients to make this Sweet Chunky Mango Guacamole are:

  • Avocado
  • Red Onion
  • Tomato
  • Mango
  • Parsley
  • Mandarin
  • Salt
  • Pepper
  • Olive
  • Hot Sauce (optional, to taste)

WHAT EQUIPMENT DO I NEED?

No equipment needed for this one! I usually just get any serving bowl and just mix everything directly in there. The serving portion I make is usually for me as my husband doesn’t enjoy fresh vegetables like I do so if you’re looking to make this for a party, just double/triple/quadruple the recipe and make it in a big bowl.

CAN I SUBSTITUTE/ADD ANYTHING OUT?

You sure can substitute or add anything to your preference! If you want to pack it with more vegetables and fruit, you can add cucumbers, pineapples, jalapenos or even some cookie pieces of shrimp or white fish like a ceviche inspired dish!

I hate cilantro so I always use parsley in lieu of that but if you like cilantro then pack it on!

WHAT DOES SWEET CHUNKY MANGO GUACAMOLE TASTE LIKE?

What I love about this recipe is that there are a lot of different flavour combos as well as textures! You get the creaminess from the avocado, the freshness from the tomato, sweetness from the mandarin juice and mango, a bit of a bite from the raw onion and savouriness from the olive oil, salt and pepper. I always add hot sauce to mine as well for a kick!

HOW LONG DOES IT KEEP FOR?

Once you make this recipe, you should eat it immediately. The tomatos will puil out a lot of water and there is mandarin juice as well so the mixture will get watery pretty quick! I have saved some to enjoy for the next day with it definitely not feeling that fresh. If you do have tons of leftovers and don’t want to waste, drain out all the liquids and store in an airtight container to container the next day maximum!

INSPIRATIONS FOR THIS RECIPE?

No specific inspiration but I’ve always loved fresh crunchy raw vegetables and fruit so these sorts of salads/salsa/guacamole are something I’ve always craved for! In the summers especially, I’m just not in the mood to stand in front of a hot stove or oven or grill so I generally stick to just grabbing a cold salad or making fresh pico de gallo!

ANY OTHER NOTES?

No other notes for this one! This is a timeless recipe for me and I could eat this every week! The only thing is that chopping the produce into diced pieces can sometimes take a while depending on your skill but it’s definitely worth it! Grab your favourite tortilla chips and enjoy!

Ingredients

  • 1 Ripe Avocado bite-sized pieces
  • 1/4 Small Red Onion bite-sized pieces
  • 1/2 Medium Tomato bite-sized pieces
  • 1/2 Ripe Mango bite-sized pieces
  • 1 Mandarin juiced
  • Cilantro/Parsley to taste
  • Salt to taste
  • Pepper to taste
  • Olive Oil to taste

Instructions

  • Chop your red onions, tomato, mango, and avocado into bite-sized pieces.
  • Add all the produce in your serving bowl then squeeze the juice of one mandarin into the bowl.
  • Next, put in some olive oil, salt and pepper to your preference.
  • Garnish with parsley, serve and enjoy!
