Is it just me or is lemonade the official ongoing summer drink?

Freshly squeezed lemonade truly reminds me of summer and I’m so excited that it’s so close! I’ve been wanting to make a lemonade recipe for a while now but didn’t know which one I wanted to make.

I was about to make strawberry lemonade as it’s one of my favs but when my MIL bought a huge container for Kiwis from the grocery store, I knew I had to try a Kiwi Lemonade version instead.

It is super easy to use any fruit for lemonade such as raspberries, strawberries, blueberries, peaches, mangos, etc. Before the pandemic, it was a tradition for me to head to our local fair in August and I’d always get BBQ ribs and a cherry lemonade!

Honestly, I used to hand squeeze every lemon until my hands were tired and it wasn’t until recently where it clicked in my head to just buy a lemon juicer!

I don’t know what I was thinking for all these years but my lemon juicer has definitely saved me so much time and energy. I picked one up on one of my Dollar Store trips last month and after I was done making my first batch of lemonade, I thought “Wow, if I made this $1 investment years ago, I would have drunk double the lemonade by now!”

Isn’t it funny how it takes something so simple to change the way you do things forever?! I’m thankfully finally at a place where I can splurge a little more on kitchen items and it’s been a game-changer!

Every time I scroll through the internet, I see so many Strawberry Lemonade recipes so I would say that’s the most popular! Kiwi is not for everyone but I love it!

HERE IS HOW TO MAKE KIWI LEMONADE:

WHERE CAN I FIND THESE INGREDIENTS?

Since lemonade is super simple and just essentially lemon, water, and sugar, it can be bought from any grocery store! As for Kiwi, for the most part, is available all over the world and in season during the Fall or November-January. The best place to get lemons if you can is at the farmer’s markets. In general, farmers’ markets are the best for any fresh produce. I don’t live near one but you bet when I do get to go to one, I become a kid at a toy store.

WHAT ARE THE INGREDIENTS?

The ingredients for Kiwi Lemonade is super simple:

  • Kiwi
  • Lemons
  • Cold Water
  • Granulated Sugar

WHAT EQUIPMENT DO I NEED?

Since this Kiwi Lemonade recipe is super easy and simple, you’ll really only need a pitcher and lemon juicer. If you don’t have a lemon juicer, you can do what I have done most of my lemonade-making life and juice the lemon with your hands on top of a fine strainer. You’ll also need to mash the kiwi before adding it to the pitcher to ensure that all the sweet kiwi juice and bits come out! Make sure you have a long spoon as well to fully mix all the sugar that will most likely fall to the bottom.

CAN I SUB ANYTHING OUT?

As this Kiwi Lemonade is only 4 ingredients, there really isn’t anything to sub out! BUT if you wanted to follow the lemonade recipe and swap the fruit, that is totally fine! I use this basic lemonade recipe all the time and just switch whatever fruit I have.

Some fresh fruits & teas that I really enjoy in lemonade are:

  • Strawberries
  • Raspberries
  • Peaches
  • Blueberries
  • Green Tea
  • Any fruit teas

Some flavoured syrups that I really enjoy in lemonade are:

  • Cherry Syrup
  • Mango Syrup
  • Grapefruit Syrup
  • Passionfruit Syrup

WHAT DOES IT TASTE LIKE?

Lemonade is very sour and tangy. The sugar should be well combined and to make your lemonade enjoyable and served with a cold glass and fresh ice. I really enjoy the sweetness of kiwi and when they are super ripe, they have the best flavour!

HOW LONG DOES IT KEEP FOR?

If you add all the fruit to the pitcher, I’d say it keeps for 2 days as the fruit gets all mushy and loses its colour. If you leave the fruit in a stored container and just put a scoop into your cup every time you want a glass, it will keep up to 5-7 days.

Alternatively, if you buy lemons in bulk, you can squeeze all the lemons in one go and keep it in a glass jar for 2 weeks and just add in your sugar and water when you want lemonade.

ANY OTHER NOTES?

You want to make sure that the kiwi is muddled to a good consistency where you can sip some bits through the straw but it’s not too mushy and become really pasty. I don’t have a muddler and use a potato masher for about 2 minutes to just get the juices out and break down the kiwi.

If you don’t like the kiwi fruit bits, you can strain it out. I suggest you let the kiwis steep in the lemonade overnight so that you could still get that kiwi flavour.

Kiwi Lemonade

Is it just me or is lemonade the official ongoing summer drink? I knew I had to make a version of lemonade that involved kiwis! Kiwi Lemonade is super delicious and the texture is crunchy from the kiwi seeds and soft from the actual mashed fruit!

Ingredients
  

  • 8 Mashed Kiwis
  • 7 Lemons Juiced
  • 1 1/2 Cup Granulated Sugar
  • 8-10 Cups Water

Instructions
 

  • To a large glass pitcher, add in your mashed kiwis and sugar.
  • Next, add in the juice from 7 lemons in the pitcher.
  • Top the pitcher off with about 8-10 cups of water and remember to taste along the way to your desired tanginess!
  • Stir everything together until everything is well combined and chill in the fridge for at least a half hour.
  • Serve over a glass of fresh ice and enjoy!

Summer is fast approaching and you NEED to make this super refreshing Kiwi Lemonade!

Now that it’s warm enough to have picnics too, you can add some alcohol in this and make it a Boozy Kiwi Lemonade Drink! I would say that the best alcohol to put in this would be either white rum or vodka!

I can’t wait to get some girlfriends together and make them some drinks this summer! Fun fruity drinks and delicious appetizers are my fav for summer!

    I’m already feeling refreshed just looking at your lemonade picture! Yes really, I think lemonade is a summer essential. I admit I’m a boozy lemonade kind of person, so this is probably the version of your recipe I’ll make.     I LOVE lemonade and Kiwi so this is definitely going on my summer list! It’s not quite warm enough here to have summer drinks outside (my favourite) so I’m still patiently waiting! This Spicy Canned Tuna Sushi Bake is creamy, savory, and packed with bold flavor! Made with simple pantry ingredients, it’s an easy, budget-friendly twist on sushi! It is perfect for sharing, scooping with seaweed, and satisfying all your sushi cravings at home.

INGREDIENTS
* 1 Can Tuna drained
* 2 Tbsp Sriracha
* 1/4 Cup Mayo
* 1 Tbsp Sesame Oil
* 2 Tbsp Furikake
* 1 Cup White Rice cooked
* 1 tsp Sugar
* 1/2 Tbsp Rice Vinegar
* 1 Packet Seasoned Seaweed

INSTRUCTIONS
* Preheat your oven to 400F and prepare a 6-inch baking pan.
* In a bowl, add in your rice and heat it in the microwave for 1 minute. This is so it’s easier for the sugar and rice vinegar to soak in. Add in your rice vinegar and sugar and mix well.
* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!

INGREDIENTS
* 1/2 Cup White Sugar
* 1/2 Cup Brown Sugar
* 1 Mashed Ripe Banana
* 1 tsp Vanilla Extract
* 1/2 tsp Cinnamon
* 1 Cup Water

INSTRUCTIONS
* In a small saucepan over medium heat, combine water, white sugar, and brown sugar.
* Stir until the sugars fully dissolve and the mixture begins to gently simmer.
* Add the mashed banana and cinnamon. Simmer for 5–8 minutes, stirring occasionally.
* Remove from heat and stir in the vanilla extract.
* Strain the syrup (optional for a smoother texture) and let cool.

INGREDIENTS
* 2 1/2 Cups Cooked Quinoa
* 2 1/2 Cups Cooked Chicken Breast 
* 2 Cucumbers diced
* 3 Tomatoes diced
* 1 1/2 Cups Feta crumbled
* 1/4 Cup Olive Oil
* 1/2 Cup Balsamic Vinegar
* 1 tsp Black Pepper
* Salt to taste

INSTRUCTIONS
* In a large bowl, combine the cooked quinoa and cooked chicken breast.
* Add the diced cucumbers, tomatoes, and crumbled feta.
* In a small bowl, whisk together olive oil, balsamic vinegar, black pepper, and salt.

Ube Butter Mochi 💜 I have been making this recipe Ube Butter Mochi 💜

I have been making this recipe for years and years now and have finally been able to post a recipe! I always whip this out whenever I have a family gathering and those are the most rushed times for me so I have never been able to film the recipe making process haha 😆 

My family is obsessed with these and I make them everytime I see them! It is the #1 requested item from me and I’m excited to share this recipe!

INGREDIENTS
* 1/2 Cup Unsalted Butter melted
* 2 Cups Granulated Sugar
* 4 Eggs
* 1 tsp Vanilla Extract
* 2 Tbsp Ube Extract
* 1 Box Mochiko Flour
* 2 tsp Baking Powder
* 1 can Evaporated Milk
* 1 can Coconut Milk

INSTRUCTIONS
* Preheat your oven to 350F and grease an 9×13 baking dish.
* In a large bowl, whisk together your butter, sugar, eggs, evaporated milk, coconut milk, ube extract, and vanilla extract until well combined. 
* Next, add in your mochiko flour and baking powder and whisk until the batter is smooth.
* Pour into baking dish in an even layer and bake in oven for 1 hour. 
* After 1 hour, let cool for 30 minutes then enjoy!
