The proper way to eat watermelon is just with a spoon like ice cream right? I dare you to tell me I’m wrong!

Summer is the only time I really eat watermelon. I’m don’t know if it’s a universal thing but watermelon gets really pricey after August. I love having watermelon for dessert to curb my sweet tooth instead of having ice cream or cake (my weaknesses).

Usually, I don’t really experiment with making my own drinks at home because I go for Happy Hour or patio lunch/dinners with some family and friends often! I now live a bit further from the city and of course, with the pandemic, a lot of restaurants went through a series of restrictions.

I had to take matters into my own hands and create drinks at home! This delicious summer watermelon daiquiri is one of the many drinks that I’ve experimented with and is successful! So, of course, I needed to share it with you all!

Normally daiquiris are made up of simple syrup, white rum and lime/lemon juice. I just used granulated sugar in this as I didn’t have simple syrup but either works!

When I went on my honeymoon in Mexico, I had so many daiquiris and bellinis! I love frozen and fruity drinks so much! I’m not a fan of beer or bitter drinks.

I added a non-alcoholic substitute in this post as well, if you don’t drink! Whenever I make drinks at my family’s home, I always make the first batch without alcohol for my little nieces and nephews so that they feel included!

HERE IS HOW TO MAKE Delicious Summer Watermelon Daiquiris:

WHERE CAN I FIND THESE INGREDIENTS?

Thess summer watermelon daiquiris uses very few ingredients which are so helpful for people who want to have a refreshing summer drink on a budget! You can get a watermelon, lime and sugar from your local grocery store or farmer’s market and your rum from the liquor store! Get whatever rum you like but make sure it’s white rum! Since watermelon is the star in this drink, having white rum helps keep it light!

WHAT ARE THE INGREDIENTS?

The ingredients for this delicious summer watermelon daiquiri are:

  • Frozen Watermelon Chunks (1″ x 1″, if possible)
  • Fresh Watermelon Chunks (1″ x 1″, if possible)
  • White Rum (any brand that you prefer)
  • Fresh Lime Juice (squeezed)
  • Sugar (granulated sugar or simple syrup)

WHAT EQUIPMENT DO I NEED?

You’ll need a strong blender for this summer watermelon daiquiris drink! The frozen watermelon chunks are hard so you’ll need a decent blender to blend it all together. You’ll need to measure your alcohol and lime juice. I use a jigger to measure the white rum and lime juice but any measuring device works as well! As always, you’ll need the standard kitchen items like a chopping board and knife.

WHAT ARE THE STEPS TO PREPARE?

The steps that are needed to make these delicious summer daiquiris are:

  • Slice – Slice all the watermelon chunks and the lime to juice
  • Measure – Measure the lime juice and rum to put into the blender
  • Blend – Blend everything together
  • Serve – Serve with a lime wedge and sugar rim (both optional but great for presentation!)

CAN I SUB ANYTHING OUT?

This Summer Watermelon Daiquiris recipe uses very few ingredients so you really don’t have much opportunity to switch anything out BUT you can definitely switch the lime juice for lemon if lime isn’t available or isn’t your thing. You can, of course, switch out the fruit but for the sake of this recipe and blog post, I say stick to watermelon 😉

As for the white rum, keep that. Alternatively, if you like vodka, you can use that or any other clear alcohol. I like white rum in fruity drinks as it’s easier to mask! For the sugar, you can use a substitute of your choice or simple syrup.

If you want to make this non-alcoholic, then swap the white rum for orange juice or pineapple juice!

WHAT DOES IT TASTE LIKE?

The taste is super subtle and fresh! The watermelon and lime compliment each other well. You get the sweetness from the watermelon and a bit of sugar but also a zing from the lime. The white rum does really well in this drink and you can’t really taste it so beware! You may be going through more of these than you can count and feel the effects of it suddenly.

HOW LONG DOES IT KEEP FOR?

This drink DOES NOT keep well at all. You’ve got to make this as you serve them. Like most blended frozen drinks, the ice and slush separate from the liquid! You can cut the watermelon and freeze the chunks beforehand but blend them when you serve them!

WHAT GOES WITH THIS Delicious Summer Watermelon Daiquiris?

These summer watermelon daiquiris go with anything! This is perfect with appetizers or snacks like:

  • Pasta Salad
  • Crab Spinach Dip
  • Shrimp Ceviche
  • Spinach Puffs
  • Maple Mustard Chicken Wings
  • some kind of crackers or chips!

Please refrain from drinking on an empty stomach!

WHAT ARE OTHER VARIATIONS OF Summer Daiquiris?

Aside from watermelon daiquiris, you could make:

  • Strawberry Daiquiris – A classic! My favorite way to have a daiquiri.
  • Peach Daiquiris – Perfect for peach season!
  • Blueberry Daiquiris – I’ve never thought of doing a blueberry daiquiri but it sure sounds awesome!
  • Pineapple Daiquiris – Another favorite of mine! I love switching between strawberry and pineapple.

INSPIRATIONS FOR THIS DISH?

I have to admit that I’m really not a summer person and that I tend to thrive in the Fall/Winter so it’s been a little difficult for me to create recipes! I do really love having watermelon and try to incorporate it into my meals as much as possible. When I’m at a bar, I tend to lean towards peach and strawberry fruity drinks so when I thought about doing a watermelon drink, I thought a daiquiri would be great!

ANY OTHER NOTES?

Remember, if you’re serving it for friends or guests, these drinks don’t keep well at all. You need to make them as you serve them! Watermelon, of course, is a watery fruit to the texture will be super liquidy which isn’t great when you’re drinking something frozen or slushy!

It doesn’t take that long to blend everything together. I’d say you can blend it for a maximum time of 1 minute.

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.
* In a small bowl, whisk together garlic, sesame oil, sesame seeds, soy sauce, brown sugar, and rice vinegar until well combined.
* Pour the sauce over the salad and toss until evenly coated.
* Chill in the fridge before serving for extra flavor for minimally 12 hours! Enjoy!

INGREDIENTS

* 3/4 Cup Oil

* Divide the batter evenly between the 12 muffin cups and sprinkle slivered almonds on top.

This Spicy Canned Tuna Sushi Bake is creamy, savory, and packed with bold flavor! Made with simple pantry ingredients, it’s an easy, budget-friendly twist on sushi! It is perfect for sharing, scooping with seaweed, and satisfying all your sushi cravings at home.

INGREDIENTS
* 1 Can Tuna drained
* 2 Tbsp Sriracha
* 1/4 Cup Mayo
* 1 Tbsp Sesame Oil
* 2 Tbsp Furikake
* 1 Cup White Rice cooked
* 1 tsp Sugar
* 1/2 Tbsp Rice Vinegar
* 1 Packet Seasoned Seaweed

INSTRUCTIONS
* Preheat your oven to 400F and prepare a 6-inch baking pan.
* In a bowl, add in your rice and heat it in the microwave for 1 minute. This is so it’s easier for the sugar and rice vinegar to soak in. Add in your rice vinegar and sugar and mix well.
* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
