Sometimes you just need a super quick and easy dinner that you can put together within 10 minutes and these Copycat KFC Popcorn Chicken Bowls are it for me!

I’m not saying it’s a healthy dish but it is super wholesome and comforting! My nieces and nephews love having these when they’re over because it’s just that dang good!

This isn’t really a recipe and more of a setup kind of deal? I don’t necessarily cook anything as everything is fully cooked but I do put the popcorn chicken pieces in the air fryer!

HERE IS HOW TO MAKE COPYCAT KFC POPCORN CHICKEN BOWLS:

WHERE CAN I FIND THESE INGREDIENTS?

The ingredients to make these super yummy popcorn chicken bowls can be found at your local grocery store! I usually keep a few packs of instant or already made frozen mashed potatoes so I can just heat up in the microwave. Then you’ll need some frozen or canned corn, gravy of your choice, shredded cheese and of course frozen popcorn chicken and that’s it!

WHAT ARE THE INGREDIENTS?

The ingredients for this Copycat KFC Popcorn Chicken Bowls are:

  • Popcorn Chicken
  • Mashed Potatoes
  • Brown Gravy
  • Shredded Cheese
  • Corn Nibblets

WHAT EQUIPMENT DO I NEED?

You really won’t need much for this popcorn chicken recipe! I use my handy dandy Chef Mike (microwave LOL) as well as my air fryer then just layer it in the bowl and eat it!

CAN I SUBSTITUTE/ADD ANYTHING OUT?

You can 100% substitute what you need from this bowl! This is a comfort dish as it is, especially for me but you may want to edit this recipe based on your dietary needs!

Some substitution ideas include cauliflower mash, vegan cheese, crispy tofu, mushroom gravy and any veggies you’d like!

WHAT DO COPYCAT KFC POPCORN CHICKEN BOWLS TASTE LIKE?

As I’ve said throughout this recipe and cannot stress this enough, it is literally a comfort meal! In almost every bite, you get a little bit of everything. Just cheese, chicken, potatoes, gravy and a dash of sweetness from the corn!

HOW LONG DOES IT KEEP FOR?

These don’t keep very well if you’re wanting crispy chicken popcorn but if you’re not, it would be great meal prep! The chicken would just be a bit soft. You can alternatively use grilled chicken and it would keep way better! I would pre-make these for up to 3 meals and have the gravy on the side if possible!

Other than that, it’s best to make it fresh and it only really takes about 15 minutes tops to eat!

INSPIRATIONS FOR THIS RECIPE?

The inspiration for this recipe really comes from my busy schedule. I’m finding less and less time every day to do everything I love so easy meals is a must for me! There are days when I crave comfort food but just have the littlest time to make something really intricate.

  • 1 1/2 Cup Mashed Potatoes frozen/instant/fressh, your choice!
  • 3/4 Cup Popcorn Chicken cooked
  • 1/4 Cup Corn Nibblets frozen or canned
  • Shredded Cheese as much as your heart desires
  • Gravy as much as your heart desires

Instructions
 

  • Prep all your ingredients as you please. Frozen that's microwaved, instant or freshly done is up to you!
  • Grab a bowl that you want to eat from and start layering. I usually do mashed potatoes, corn, popcorn chicken, cheese then gravy!
  • Serve and enjoy!

This Asian Sesame Vermicelli Salad is light, refreshing, and packed with flavor! Tender vermicelli noodles are tossed with crisp veggies and a savory sesame dressing for an easy, vibrant dish that’s perfect for lunches, meal prep, or summer gatherings.

INGREDIENTS
* 3 Bundles Vermicelli about 150g uncooked
* 1 Cup Purple Cabbage thinly shredded 
* 1 Cup Red Peppers thinly shredded 
* 1 Cup Carrots thinly shredded 
* 1/2 Cup Edamame
* 2 Stalks Green Onion thinly sliced 

Sauce
* 1 Clove Garlic grated
* 2 Tbsp Sesame Oil
* 1 tsp Sesame Oil
* 2 Tbsp Soy Sauce
* 1 Tbsp Brown Sugar
* 1 Tbsp Rice Vinegar

INSTRUCTIONS
* Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
* In a large bowl, combine the cooked vermicelli, cabbage, red bell pepper, carrot, edamame, and green onions.
* In a small bowl, whisk together garlic, sesame oil, sesame seeds, soy sauce, brown sugar, and rice vinegar until well combined.
* Pour the sauce over the salad and toss until evenly coated.
* Chill in the fridge before serving for extra flavor for minimally 12 hours! Enjoy!

These Poppy Seed Almond Muffins are soft, fluffy, and bursting with sweet almond flavor. With a tender crumb and delicate crunch from the poppy seeds, they’re the perfect cozy bakery-style treat for breakfast, snacking, or coffee breaks.

INGREDIENTS

* 1/2 tsp Salt
* 1/2 tsp Baking Soda
* 1/2 tsp Baking Powder
* 3/4 Cup Oil 
* 1 Cup White Sugar

* Fold in the poppy seeds.

* Next, add in the rice mixture to your baking pan in an even layer. Sprinkle furikake on top.
* Use the same bowl that you mixed up your rice in and add in your drained canned tuna, sesame oil, sriracha, and mayo and mix well.
* Add the layer of saucy tuna on your rice layer evenly on top. Sprinkle with furikake.
* Bake at 400F for 20-30 minutes or until the top is golden brown.
* Serve with a side of seasoned seaweed and enjoy!
